What did you bake today ? OK if not from scratch

Thick, bakery style, chocolate chip, and walnut cookies...no joke, the size of baseballs when you bake them!
 

Also just finished making Nanaimo bars for some baking tins I’m giving for Christmas.

Aww, thanks. I hope you have a happy Christmas (albeit different from what is expected).

I actually had to import a few of the ingredients:

- Birds custard powder was brought over by a friend visiting from London but one tin lasts a long time (it is actually available here in the “international foods” sections but a lot more expensive0

- Graham cracker crumbs are all but impossible to find here. Even the American Store rarely has them (they do sometimes have the pre-made graham cracker pie crusts)

- Flaked coconut is a weird one. They have desiccated coconut here that is easy to find but I don’t find that it really works as a replacement because it is really drying. I actually had some in a crepe shortly after I moved here and I really didn’t like the ”mouth feel”. I brought back a big bag of flaked coconut last time I was home, though it is available at the American Store (there is a store that is literally called the American Store here)

:goodvibes Funny - it was precisely the custard powder and graham cracker crumbs I was wondering about. Sounds like you got it all covered though. Don't forget to make them some butter tarts too! :wave2:
 
I know these cookies are not traditional at this time, But it is my son's birthday. I always make Turtle Cookies for him, they are his favorite. They are so good with maple flavoring and a thin chocolate icing for the shell, and pecans for the feet and head.
 
I made gluten free cinnamon rolls for DD, but they won't get baked until tomorrow.
Also made an enchilada casserole for tomorrow......DS (he's hosting) decided on a Mexican feast for Christmas dinner.
