Hi everyone! I'm new to this board at was just looking for a little advice

We are trying to book our trip to Disneyland, but can't decide on the dates
Would it be better to go 11/26 till 12/1 or 12/3 till 12/8
 
Either one would be good. Although the second one may run into the Candlelight Processional on some of the evenings, which makes the park full of locals. Check the dates on that.

Both are great times during the day, though, and the parks are so pretty with the Christmas decorations up!
 
Avoiding the weekend during Christmastime is VERY smart. The worst day I ever had at Disneyland was on a Saturday afternoon/evening in early December. The crowds, the wait times, it was a nightmare. (And a bigger nightmare with a stroller!)

You'll have some good times especially midweek, at its quietest, and being there that long allows you to pick and choose different places to hit first, avoid when crowded, etc.

When's Thanksgiving this year? If it is right before your Nov dates, I would probably pick the December week instead as you know people will slop over from a Thanksgiving break potentially giving you more crowds. The December week is neither Thanksgiving or Christmas break related so it might be a bit quieter then.
