One of my wonderful instructors brought me a King Cake today that she had made (just for me--in a box and everything and she told me not to share!

) and she included the recipe she uses. It's delish and a little easier than Emeril's.
Created for a bread machine:
Dough--
1 1/8 cups Water
2 tbs margarine or butter
2 tbs sugar
1 tsp salt
3 cups bread flour
2 tsp yeast
Knead and let rise in bread machine. Remove from machine, roll or press into a 6 x 30" rectangle. Spread filling into rectangle. Bring the long edges together and seal. Using your hands, shape and twist the dough into a circular braid. Cover and let rise. Bake at 325 degrees or so until done. Cool and ice.
Filling:
12 tbs (3/4 cup) softened margarine
2 2/3 tbs cinnamon
3/4 cup brown sugar
6 tbs chopped walnuts
(This may make more than needed--depends on how heavy you apply the filling.)
Icing:
1/2 lb margarine (2 sticks) at room temp
1/2 lb cream cheese (8 oz) at room temp
1 lb powdered sugar
1 tsp lemon juice
1 tsp vanilla extract
Beat cream cheese and margarine together in a bowl with a mixer. Once all of the sugar is in the bowl, mix for at least an addition 12 minutes (yes, that says TWELVE!) When almost done, add in the extract. This will probably be more icing than you need but by the time everyone is through sampling, the bowl will be empty.
I can tell you right now that this cake is delish! I'm supposed to take it home but I've already broken into mine!
This ought to hold me over until paczki time!
