What can I do with ground beef?

First, whatever you aren't going to eat today or tomorrow as something you need to have it raw (eg meatloaf, burgers, etc) you can fry in a pan until brown. (same as usual)

Then dump it into a colander to remove the excess fat (easier than trying to spoon it out of the pan) & pack into freezer bags or containers in meal-sized portions.

This makes for quick, easy meals later on & you don't even need to find new recipes if you don't want because you can spread it out over time. I prefer to do this to the old method of freezing it raw - I never remembered to get it out in time to defrost & just did it in the pan. I ended up with larger lumps instead of nice crumbles.

I'll check my list of recipes for other ideas & post later.
 
Velveeta Cheeseburger Mac

1lb ground beef
1 pkg Velveeta shells & cheese
1/3 c ketchup or BBQ sauce

1) brown ground beef and drain
2) add shells, 2c. water and ketchup/bbq, bring to boil. Reduce heat, cover & simmer 10 minutes.
3)stir in cheese sauce
 
OK. In addition to the ones listed already, I make those Bisquick "Impossible Pies" & these....

Tater Tots Hot Dish
1 lb hamburger, browned
1/2 lb peas, frozen
1 can cream of chicken soup
1 can cream of celery soup or
1 can cream of mushroom soup
1/2 c milk
Tater Tots

Mix together & cover top with tater tots. Bake at 350 for 45 min in uncovered pan.

Taco Salad
1 lb ground meat
¾ c water
1 pkg taco seasoning
1 head lettuce
2 c kidney beans
1 - 2 c Cheddar, grated
2 tomatoes, chopped
1 - 2 c carrots, grated (opt)
½ bottle French dressing
taco chips, crushed
Prepare meat as for tacos with water & seasoning; chill. Toss with lettuce, cheese, tomatoes & carrots. Pour dressing over all & mix. Use plain chips or Doritos.

Beef Taco Bake

1 lb ground beef
1 can tomato soup
1 c salsa
½ c milk
6 flour tortillas cut into 1" pieces
1 c shredded cheddar cheese (divided)

Cook beef until browned; drain. Add soup, salsa, milk, tortillas & ½ cup cheese. Spoon into 2 quart baking dish. Cover. Bake @ 400° 30 minutes or until hot. Sprinkle with remaining cheese.

BBQ Beef Cups
3/4 lb ground beef
1/2 c BBQ sauce
1 Tbl dried onion
12 oz pkg refrigerated biscuits
1/3 c cheddar cheese

Grease a muffin pan. Brown beef & drain fat. Stir in BBQ sauce & onion. Simmer over low heat. Flatten each raw biscuit & press into muffin cups. Make sure dough comes to rim. Spoon meat into each. Bake at 350 for 12 minutes. Sprinkle with cheese & bake 3 more minutes.

2 variations on that one....

Pizza Cups
¾ lb ground beef, or pepperoni
½ c spaghetti sauce
½ Tbl garlic powder
12 oz pkg refrigerated biscuits
1/3 c mozzarella cheese
2 Tbl parmesan cheese

Grease a muffin pan. Brown beef & drain fat. Stir in sauce & garlic. Simmer over low heat. Flatten each raw biscuit & press into muffin cups. Make sure dough comes to rim. Stir in mozzarella. Spoon meat into each. Bake at 350 for 12 minutes. Sprinkle with cheese & bake 3 more minutes.

Taco Cups
¾ lb ground beef, or shredded chicken
½ c water
2 Tbl taco seasoning
12 oz pkg refrigerated cornbread biscuits
1/3 c cheddar cheese

Grease a muffin pan. Brown beef & drain fat. Stir in water & taco seasoning. Simmer over low heat. Flatten each raw biscuit & press into muffin cups. Make sure dough comes to rim. Spoon meat into each. Bake at 350 for 12 minutes. Sprinkle with cheese & bake 3 more minutes.

just added: spaghetti

lasagna

This doesn't have a name, but it's good.

Put sliced potatoes, carrots and onions in a baking dish (season).
(or the veggies of your choice)

Mix up 1-2lbs ground beef with your favorite seasonings (I use ketchup, worcestshire sauce, salt & pepper and whatever else I might feel like using).

Spread the ground beef on top of the vegetables. Cover with aluminum foil and bake on 350 until it's done. I like to cook a little after removing the foil to get it brown.
 
oops on that butcher marie.. I can't even imagine 300 lbs of any meat!


Lets see, we mostly use ground beef, so mostly everything.

We've done meatballs, spaghetti, tacos, sloppy joes, tamales, lasagna,pot pies, homemade hot pockets, chili, crock pot recipes, you name it, I've made it.
 
I have one day in the fall & one day in the winter when I make a big pot of chili beans, vege. beef soup, spaghetti sauce. Freeze hamburger patties, we usually will have a humburger & hot dog night about once a month.

I make a recipe that I got out of 30 min. meal magazine:
1# ground beef (cooked & drained)
6-8 strips cookded & crumbled into small pieces
1 can tomato soup
package spiral pasta/noodles
chili powder to (your) taste

In a skillet
Cook & drain the hamburger, add the bacon, tomato soup, chili powder (I also like to add cayenne pepper, old bay & whatever spices I come to first - we like things with a little kick), mix. Top with shredded cheddar cheese & heat until melted.

This is quick & easy, DS & DH love it - DD is not a big fan ground beef though.

How about hamburgers or chili?

You could even make a variation of beef stroganoff.
 
This is one I have made for years and everyone loves it:)


Cheeseburger Macaroni

1/2 lb of ground beef
7 oz of elbow macaroni
1/2 c catchup
1 tsp prepared mustard
2 1/2 c water
salt and pepper
3/4 pound of velveeta


brown ground beef, drain. Add macaroni, ketchup, mustard and water along with salt and pepper to taste about 1/2 tsp pepper and 1 tsp salt. Cook for 12 mins on med low until mac is tender. Add in cubed velveeta and melt. Serve immediatly.
Can be doubled easily for more than 4 servings. Also yummy reheated next day :)


The ingerdients sound a bit odd but it really is yummy and only have to dirty up one pot for whole thing ;)
