What attractions for Epcot?

I just can't seem to love Epcot....I don't know if it is because my children are small and can't ride a lot there or if I'm missing something in general. I guess my questions is - how do you suggest touring Epcot with 2 small children?

Here is my plan so far (in no particular order)
Arrive in the afternoon (around 1pm)
FP Soarin (and then use child swap since only one of them will be 40in)
Turtle Talk with Crush
Spaceship Earth
The Seas with Nemo and Friends
Dinner at Akershus around 6pm

Is there anything in particular that you love about Epcot with your little ones? Is there something I'm missing? Is there an attraction that is on your "DO NOT MISS" list, esp when you have little ones?
 
My daughter is 6 and loves Epcot, always has. There may not be a lot of rides, but there is a lot to see and do. Check out Innoventions. Spend time exploring The Seas. Wander around the World Showcase.
 
Spend some time looking at the live entertainment offerings. Also check out the Phineus and Ferb adventure. How about some character M&Gs? Living with the Land. El Rio Del Tiempo. Journey into Imagination.
 
Hi, there's the 3 amigos ride in Mexico thats child friendly, Canada has a lovley waterfall, Germany a model village with train etc. There is also mission impossable, running/walking around world showcase following the clues and finding little corners of each country you might normaly miss can be fun.

At the seas at certain times the dolphin trainers show the dolphins doing tricks. (not sure if that ones still running as the last time i saw it was 2011)

Living with the land is a nice slow boat ride may be a tad boring for the young ones but then again they may really like it.

There really is lots to see and do at Epcot, its the perfect place to slow down and take it all in.

In addition to what you already have planned:
- Test Track with the 6yo
- Check out the live entertainment schedule for World Showcase. There might be fun stuff your kids would like. Mine loves watching the Acrobats in China.
- Little ones love to watch the train set in Germany
- interactive exhibits in Innoventions
- meeting the characters
- time your visit to the Seas for when they do the dolphin show
