I am very busy during the week. Both hubby and I work FT and we have 4 kids in the house in activities. Two in high school . So the only way it is not take out is with a crockpot...

what are your fav meals?

Is the search function broken again? I swear that this is a semi-weekly thread!

If you don't want to bother with searching, there's an entire forum here on the disboards and it's just for cooking! They even have a well-maintained index of just crock pot meals.

I haven't seen a crock pot thread in two Falls.
I take a bag of Mrs. T's Pierogies, cut an onion and stick of butter in the bottom, leave on low and they are great for days everyone is running. I put a box of frozen broccoli or Brussels sprouts in a corner. SAMs has a chicken spinach sausage, I cook off and add to the slow cooker to keep warm.

Don't the pierogies get soft and mushy?
 

Any type of soup or chili. You can put it together the night before, store in the fridge and then put it on in the morning to cook. :)
 
I just made this Sunday. Get a chuck roast and an envelope of onion soup mix. Coat the roast with the dry soup. Wrap in 3 layers of foil. Put it in the crock pot on low for 8 hours. Comes out perfect.
 
I have two good recipes:
Angel Chicken
6 boneless, skinless chicken breasts (I have used less)
1 can Golden Mushroom Soup
4 0z. onion and chive cream cheese
1/2 cup water or chicken broth
1 package of dry Italian salad mix (I use Good Seasons)
1/2 cup melted butter
*Note: I don't like a lot of dishes so I start off putting all ingredients except chicken in crock pot and get it warmed up. Then I place chicken on top. Cook on low for 4 to 5 hours. Serve with angel hair pasta.
If you like a lot of sauce, double the recipe (not the chicken).


Another good recipe
Fajitas
1 pound of flank steak (cut lengthwise in half then crosswise into thin strips)
1 medium onion, cut into strips
1/2 cups medium salsa (I've used mild)
juice of two limes
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1 small green pepper, cut into strips
1 small red pepper, cut into strips
four tortillas (warmed)
1. Place flank steak (cut up as above) in slow cooker. Combine onion, salsa, lime juice, chili powder, cumin and salt in crock pot. Cover, cook on low 5 to 6 hours.
2. Add bell pepper. Cover, cook on low 1 hour.
3. Serve with flour tortillas and additional sides if desired.,

A couple of our favorites...

Mac n Cheese..just google Crockpot Mac and Cheese.

Sausage Soup from Bertuccis Restaurant. Basically..saute Italian Sausage...not links...in EVOO. Remove when done...in same pan saute one small onion with a tsp of butter...add sausage back in with small can of of tomato paste. Cook till its incorporated.

In crockpot add 8 cups water, one28oz can crushed tomatoes with italian seasoning, 8oz chopped spinach, and sausage mixture. Hour before dinner add 3/4 cup of rice. Hearty and tastes even better the next day.

THREE ENVELOPE POT ROAST....large Chuck Roast with 1 envelope each of Ranch Seasoning, Brown Gravy mix, Italian Dressing Seasoning. and 1 cup water. I mix all together then pour over roast. Cook all day. Slice and put meat back in 30 min before eating.

BUFFALO CHICKEN WRAPS..couple boneless breasts...add 6-8oz of Franks Red Hot Sauce, Envelope Ranch Dressing and one tablespoon butter. Cook all day and shred meat and put back in saucean hour before dinner. Serve on tortillas with lettuce and blue cheese or ranch dressing.

pork loin chops
marinade in bag with some soy sauce and chopped onion for about 1 hr.
add to crockpot
1 can of cream of mushroom soup that is mixed with 1 can of milk
1 can of mushrooms pieces or fresh mushrooms chopped
cook on low 4-6

add sourcream before serving and serve over rice or egg noodles
 
My absolute favorite and it's so easy and delicious!

Crock Pot Pesto Ranch Chicken Thighs

8 boneless skinless chicken thighs
6 ounce jar of pesto
1 package Ranch Dressing Seasoning Mix
1/2 cup chicken broth

Turn crock pot to high setting. Place chicken thighs, pesto, ranch dressing and chicken broth into crock pot. Stir gently to combine all seasonings. Close with lid and cook on high for 3-4 hours or on low for 6-8 hours.
Serve with a side of mashed potatoes and a simple salad.
Makes 8 servings
 
chuck roast
1 package onion soup mix
1 bottle of red wine

you can brown the roast first, but you don't have to. Just dump it all in and cook on med for 8 hours


One large sliced yellow onion
lots and lots of garlic cloves to taste
chicken breasts
red potatoes (cut in half if they are larger)
frozen carrots (crinkle cut rounds)
1 can of chicken and stars soup
1 can of water

Throw it all in in that order and cook on med for 8 hours

I don't really use recipes, I just do whatever, so hopefully those aren't too vague.
 
I try and use my crockpot at least 3 days a week. Last night I made taco soup (it's thicker than soup so I serve with cheese, sour cream, and tortilla chips)

Brown hamburger/ground turkey with onions (I use about 2 lbs and mix turkey with ground beef and use a bag of frozen diced onions)

Add taco seasoning to the meat mixture
Put meat mixture in crock pot and add:
1 drained can of corn
1 drained can of dark red kidney beans
1 can of rotel
1 large can of tomato sauce
Cook on low
 
My new go-to crockpot meal is Lentils. I take 2 cups of lentils and the fluid required to cook them (7-8 cups) and that's my base recipe. I always use an Indian sauce for some of the fluid (one jar of Tikka Masala, Jalfrezi, or Butter Chicken sauce) and then either broth/water for the rest. Then, I add whatever veggies or proteins I have and cook it on low for between 6-8 hours (until the lentils are soft) and I serve it with long grain white rice. Cheap, tasty, healthy meal!

Yesterday, I had 1 lone lamb shoulder chop (pulled it and shredded it back in to the lentils once it cooked in the crockpot), 2 chopped purple top turnips, 1 large chopped sweet potato, 1 chopped sweet onion, some tomato paste, garlic, salt, and black pepper with the lentils, a tikka masala sauce, and regular water. It came out amazing (as always) and I have enough to serve as a side for tonight's meal (I always make enough for a main meal and for a side, just b/c of cook once and eat twice:)...
 
Corn chowder- family favorite
2bags frozen corn
2-32oz. Chicken broth
Med. onion,diced,
5 small diced potatoes (I don't peel)
Parsley to taste
Salt
Pepper

2 cans evaporated. Milk ( not condensed)
Dried potato flakes,enough to thicken soup
Some cooked bacon,crumbled (can omit)
Place all ingredients in slow cooker EXCEPT bacon and potato flakes
15 minutes or so before eating, add some potato flakes, I add about 1/2 cup, but you can add more or less.
Garnish bowls with bacon crumbles( my ds adds shredded cheese on top)
 
I just posted on the other thread about pressure cookers, but I wanted to suggest you look into buying one the of electric pressure cookers that are popular now. I have used mine a couple of time and love it. I was using one of the older pressure cookers and while I liked it, I really love this one.

Wow. Just when I thought people couldn't be more rude and snotty. Geesh.

OP, I'm with you! 3 kids, 5-6 day/week sports commitment and DH and I both coach said sports means most nights we don't get home until 8pm. Crockpots are vital in my home in the fall. And I'm ALWAYS looking for new ideas. Thanks for starting this thread. I bet we will see tons of new recipes that haven't been posted before.

For us, chili, white chicken chili, tortellini soup, spaghetti, and pot roast are staples. But my kifs get sick of all that. I need new ideas, too!

I do the 3 envelope one too. I put in carrots, potatoes, and onions peeled and cut up when I start it in the morning. I do not slice mine until it comes out. It tastes just like grandmas.

I'm going to try this without meat. I'm vegetarian and love lentils.
