My new go-to crockpot meal is Lentils. I take 2 cups of lentils and the fluid required to cook them (7-8 cups) and that's my base recipe. I always use an Indian sauce for some of the fluid (one jar of Tikka Masala, Jalfrezi, or Butter Chicken sauce) and then either broth/water for the rest. Then, I add whatever veggies or proteins I have and cook it on low for between 6-8 hours (until the lentils are soft) and I serve it with long grain white rice. Cheap, tasty, healthy meal! Yesterday, I had 1 lone lamb shoulder chop (pulled it and shredded it back in to the lentils once it cooked in the crockpot), 2 chopped purple top turnips, 1 large chopped sweet potato, 1 chopped sweet onion, some tomato paste, garlic, salt, and black pepper with the lentils, a tikka masala sauce, and regular water. It came out amazing (as always) and I have enough to serve as a side for tonight's meal (I always make enough for a main meal and for a side, just b/c of cook once and eat twice
