What are you canning from the garden?

Small garden this year, so I didn't do much.

13 half pints of hot salsa (tomatoes, jalapeno, habenaro)
6 pints of summer salsa (tomatoes, peaches, pears)
I also froze 6 pints of spaghetti sauce (we eat it pretty fast, so I just freeze it)
My mom is coming this weekend and we'll make hot dog relish using some of the green tomatoes. If I still have extra, I'll make some salsa verde.
 
Wow! I didn't think anyone canned anymore. I sarted 3 years ago. So far I did
21 quarts of tomatoes
14 pints dill pickles
Need to do 7 more pints pickles in a
Also made 12 batches of pesto to freeze
Also 7 pints of zucchini relish
Nice to now how much everyone has done
I taught two nieces to continue this process

Hot Peppers:

1 peck hot peppers (Hungarian Hot) sliced
1 pound carrots -sliced
1 can black olives - sliced
2 lg cloves of garlic (or more) sliced
oregano or Italian seasoning to taste - 2 tsp?
1/2 c. salt - or to taste
2 qts. corn oil
2 c. white vinegar

Use rubber gloves when slicing hot peppers. Mix everything together. Let set overnight or 6 - 8 hours. Can in sterilized jars. Hot bath 15 minutes.
 

I think thats pretty good for your first year of canning, to me it gets addictive. Also my family always want to know what Im working on so they can get a sample jar. I do alot of grilling sauces and bbq sauces and have been tooling with the idea of a sauce and salsa business, we shall see I guess! Good luck on whatever you try next and have fun:goodvibes

So far we have
125 pints of green beans
8 quarts of green beans
37 various size jars of sweet jalopeno pepper jelly:love:
24 quarts of tomatoes, our tomatoes got a blight early in the season and I have had a lot of waste
23 pints of salsa
8 pints of bread and butter pickles
8 pints of picked hot banana peppers

We have also dried lots of grape and cherry tomatoes to add to soup this winter.

Last year I made so much jam and jelly I didn't have to do it this year.

It is addicting and we are always looking for new recipes so thanks for posting some!
 
I would love to see some recipes on here for all of us canners!

There is a website called homesteadingtoday.com They have a section called "preserving the harvest". There are recipes and tips galore! I got quite a few recipes from there. Kool-aid jelly and banana nut jam are just a couple. The kool-aid jelly is pretty neat. I haven't tried the banana nut jam yet.
 
Living where we do it's interesting because our gardens all played out in mid June. This weekend I will be preparing my gardens for fall crops. The heat from June till the end of August kills everything so our timetables are all different. For some reason I just don't feel like canning in June so I will not start till November which works out pretty well because I give a lot of things as Christmas presents. I make bread and butter pickles from zuchinni and yellow squash, jalepeno jelly, blueberry lemon marmalade, apple butter, and corn relish. This year I may also do a batch of pear relish and if I get out to my acrerage during the fall, I may also do some mesquite bean jelly.
 
i don't have counts and this is my first year also but we have:

rhubarb conserve (omg, YUMMMMEEEE)
apple butter
pear sauce
chinese plum sauce
summer squash pickles
radish pickles
spirited blueberries
zesty peach bbq sauce
apple chutney
fragrant island chutney
salsa
last night i started tomatoes--5 1.5 pts, 6 pints and 3 quarts of green tomatoes

we've put zucchini, squash, green tomatoes and peaches in the freezer.

today i'm driving up to maine to freeze corn, pick apples and bring home TONS of tomatoes for canning. I'm gonna scrounge thru gf's garden and see what else she has. Prolly some spaghetti squash.
