What are the MUST Do's?

I almost always go to Disney and have not been to Universal or Islands of Adventure since around 2000 or so! I would like to know what the MUST DO attractions are as we will be visiting Thanksgiving Weekend 2013 and know the parks are going to be busy? My kids are 12, 8, 5 also so wanna know about attractions for them too!

At the Studios, Disaster is also worth a look
