From recent experience booking a last minute trip 2 weeks out:
Flight of Passage (AK)
Navi River Journey (AK)
Frozen Ever After (Epcot)
Seven Dwarves Mine Train (MK)
Toy Story Midway Mania (DHS)
Tower of Terror (DHS)
I was unable to get FPs for the first four on my list. For last two times were very limited. I didn't try for every headliner, Space Mt comes to mind, so YMMV.

did I say FOP( I booked this 7AM EST 60 days out and on day 5 of my vacation the earliest was 4pm and and by 8;30 they were all gone
the river ride in Pandora if you are booking at 60 days at 7 EST then you should be ok

ROL is kind of hard it depends on the crowds that day
The vast majority of the 62 FP attractions at WDW have FPs available as late as day-of.
- Attractions listed here are the most difficult to get. Onsite guests can expect limited availability even at 60 days in advance, while offsite guests are unlikely to get much availability (if at all) at 30 days. Acquiring these attractions less than 7 days in advance may require frequent monitoring of FP availability via the MDX app or website. Same-day FPs are most unlikely, but possible with constant monitoring via MDX.
Seven Dwarfs Mine Train (Magic Kingdom)
Frozen Ever After (Epcot)
Avatar Flight Of Passage (Animal Kingdom)

FOP is by far the hardest to get right now

I keep trying to get an earlier time for our FOP FP, and it still shows that we can get NRJ. (I know why, it is a one and done type ride and we've already done it.)
We booked at 7am on our 60 day mark and got FOP for the first day - then a couple hours later was able to change it to day 5. It really does depend on what time of year you are going.
But as everyone else has said

I've been told it's FOP, and to lock this down first when our 60 day FP date arrives (not for a while).
But I agree I think the difficulty of securing FPs for FOP is also linked to time of year. Since our trip is December, I plan to be ready to go the minute our FP 60 day time opens
Keep trying! The same thing happened to me-I could only get Fligh of Passage on my last day, the day for which I had an ADR in the MK that I didn't want to miss. Just yesterday I was able to get a FoP FastPass on my "official" AK day

I see you are a fellow Louisianian. Yes I was actually able to do the same thing for my actual day early in September, albeit I couldn't get one until pretty late in the evening. I'm going to keep trying for a morning one, but that may be a long shot so I'm happy for what I got.
