Ugh, I'm so frustrated with eating right now. I'm tired of packaged food and want to start eating healthier. What are some of your favorite recipes?
 
Hey, hun. I have tons of healthy recipes. :)

Spicy Fish Tacos with Corn Salsa

1 cup corn
1/2 cup diced red onion
1 cup peeled, chopped jicama
1/2 cup diced red bell pepper
1 cup fresh cilantro leaves, finely chopped
1 lime, zested and juiced
2 tablespoons sour cream
2 tablespoons cayenne pepper
1 tablespoon ground black pepper
2 tablespoons salt
6 (4 ounce) fillets tilapia
2 tablespoons olive oil
12 corn tortillas, warmed

DIRECTIONS
Preheat grill for high heat.
In a medium bowl, mix together corn, red onion, jicama, red bell pepper, and cilantro. Stir in lime juice and zest.
In a small bowl, combine cayenne pepper, ground black pepper, and salt. Brush each fillet with olive oil, and sprinkle with spices.
Arrange fillets on grill grate, and cook for 3 minutes per side. For each fiery fish taco, top two corn tortillas with fish, sour cream, and corn salsa.

Italian Chicken (I serve this over whole wheat pasta, and I leave out the alcohol)

1 small onion, thinly sliced
1 medium red bell pepper, seeded and thinly sliced
4 cloves garlic, minced
2 teaspoons dried rosemary
1/2 teaspoon dried oregano
8 ounces turkey Italian sausages, casings removed
8 (4 ounce) skinless, boneless chicken breast halves
1/4 teaspoon coarsely ground pepper
1/4 cup dry vermouth
1 1/2 tablespoons cornstarch
2 tablespoons cold water
salt to taste
1/4 cup chopped fresh parsley

DIRECTIONS
In a 5 to 6 quart slow cooker, combine onion, bell pepper, garlic, rosemary, and oregano. Crumble sausages over onion mixture. Rinse chicken and pat dry; arrange in a single layer over sausage. Sprinkle with pepper. Pour in vermouth. Cover, and cook on Low setting for 5 to 7 hours, or until chicken is tender and cooked through when pierced.
Transfer chicken to a warm, deep platter, and cover to keep warm.
In a small bowl, stir together cornstarch and cold water. Stir into cooking liquid in slow cooker. Increase heat to High, and cover. Cook, stirring 2 to3 times, until sauce is thickened (about 10 more minutes). Season to taste with salt. Spoon sauce over chicken, and sprinkle with parsley.

You have to try and mix vegetables up a little bit, otherwise they get boring. Instead of steaming them, try sauteing or grilling them.

Incorporate healthy fats into your diet like nuts, avacado, nut butters, olive oil, etc. Stay away from refined, processed things as much as you can.

One of my new favourite desserts is 1/2 cup of vanilla frozen yogurt (90 cals), then I take a few chopped up strawberries and sprinkle them with a tiny bit of slenda, and put them on top of the yogurt. The whole thing is less than 100 calories.

Pasta Pronto Italiano
1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner

1 lb. lean ground beef


1 jar (15 oz.) pizza sauce


1/2 cup KRAFT Pizzeria Shredded Four Cheese


Make It!




PREPARE Dinner as on directed on package. Meanwhile, brown meat in large skillet; drain, if necessary.
ADD Dinner and pizza sauce; mix lightly. Sprinkle with shredded cheese; cover. Reduce heat to low; cook 2 min. or until shredded cheese begins to melt.

Fettuccine Alfredo

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed


1/2 cup KRAFT Grated Parmesan Cheese


3/4 cup milk


1/4 cup (1/2 stick) butter or margarine


1/4 tsp. white pepper


1/8 tsp. garlic powder


8 oz. fettuccine, cooked, drained


1/8 tsp. ground nutmeg



Make It!




MIX cream cheese, Parmesan cheese, milk, butter, white pepper and garlic powder in medium saucepan; cook on low heat until cream cheese is melted and mixture is well blended.
TOSS with hot fettucine. Sprinkle with nutmeg.
 

Jenny, what do you have for sides or appetizers?
 
For breakfast sometimes I make an egg white sandwhich
- 2 egg whites
-whole wheat high fiber english muffin
-low fat slice of cheese.

I use a bit of cooking spray instead of butter to cook the egg. then I just put it on the english muffin and top it with cheese and ketchup.

With the stuff I use its under 250 calories, 3 grams of fat, and 8 grams of fiber.

Mmm, that sounds delicious! Kind of like the low-cal version of a McMuffin! It's especially good because they make these wonderful 100 calories english muffins.

yes I love the 100 calorie english muffins! uhg it's almost 11 pm and I wanna make one now hahah.

Hungrygirl!!! *fan girl squeal* I have her cookbook '200 under 200'. It's 200 recipes under 200 calories. They're such easy, real world kind of recipes. Nothing fancy or over the top. She has the best advice ever. :D

I have such a problem eating because I've got a small palette and a small appetite. I'm trying to be adventurous.
