Ground beef with rice.
I think I just had a brain-cramp this weekend and didn't prep well. DD takes bagged salad and yogurt when we travel; she'll eat an entire bag salad for her lunch. I also had crostini and ricotta in the cooler, which we both enjoy, and some cheese/cracker packets. It's hard to plan when you have to schedule around performance times, dancer is starving but doesn't want to eat a lot before going on stage, and just having, as I said, a brain cramp. I didn't think about fruit (as I don't eat it) and DD brought baby carrots but not enough. I pretty much had DD covered, but myself, not so much. Next week, I'll plan better! We order from Doordash a lot, when we've been driving all day & are too tired to go out to eat. It's really easy. You definitely should to give it a try. Lunch is where I struggle, when we're driving. We usually want to get the quickest option available, so we can get to our destination ASAP. I'd love some tips for more healthy/ low calorie fast food or fast casual options that I can find in most areas.
I don't know if you're interested in going through the effort, but we take a cooler on the road. I try to always have stuff to make a turkey sandwich that we can stop at a rest area & put together, if necessary. (turkey, cheese, lettuce, bread & condiments) We also travel with fruit & DH likes to have chips available. Like you, we usually carry sandwich cracker multiple packs for desperate times. Babybel cheese is also good for a quick snack to tide you over. I like to combine one of those with half a green apple or plum for a more sustantial snack. I also carry my breakfast with me for convenience.
That's awesome. I do butter, cream cheese, half and half, parm cheese and garlic powder. Melt butter, add in cream cheese, once melted together, add half and half, parm cheese and garlic. Mix it all together then take off heat and let it thicken up.@WDW_fan_in_TX I make Alfredo sauce item. This is my recipe.
Melt 4 tablespoons of butter
Add 11/2 cups heavy cream
Bring to a simmer
Simmer 3-4 minutes
Remove from heat
Stir in 1 cup of Parmesan cheese
I put this over a pound of cheese tortellini and put under the broiler until golden brown but you could just add it to pasta.

One of the things we do for lunch on road trips is go to a grocery store. Most of the grocery stores in our area have re-instated their hot bars (which were closed during covid) so we can get chicken wings or pieces, mac and cheese, and a variety of hot dishes (or fried things like potato wedges and such). Many also have a salad bar, or at least pre-packed salad options (not the bagged salad, actual individual salads).
