What’s for Dinner Tonight?

We eat one, singularly perfect ear of sweet corn per year (we're not really corn on the cob people) and tonight's the night! It's a locally-famous variety called Taber Corn, from a specific agricultural region in the southern part of our province. It's harvested in late summer and sold everywhere for a few weeks from the back of farm trucks. I roast it right in the husk to intensify the flavor - no water, salt, sugar or whatnot. Peel off the husk and rub off the silk; butter and salt to taste. :cloud9: A little nibble of heaven!
 

We had leftovers tonight of the balsamic chicken with fresh tomatoes and mozzarella I made two nights ago. I discovered that the balsamic vinegar and tomatoes are far too acidic when one has a large cut in her lower lip from faceplanting in a parking lot. It was still very tasty but not as pleasurable as the first night we ate it. I'm already on the mend though and very grateful to be okay...
 
Finally gotten used to a new daily schedule and now tend to eat dinner around 8:00 PM (aka 20h). Took about a week to get the kitchen in order despite my son’s best efforts but of course he’s dealing with the “picky woman” 😂. We ate out generally during that time which was a nice change of pace.
Last night’s meal was chicken in a mustard cream sauce with roasted carrots and new potatoes. Ended it with a green salad and a cheese plate. Drank cider with dinner which is a norm in this part of France which delights me. I’m loading up on varieties to take home.
 
Last night we went to see our friend’s band again at a different restaurant/ bar. They had a Portuguese steak dish so I had that. DH had a couple of apps- deviled eggs ( these were so flavorful with a little spice!) and little necks in oils and garlic with crusty bread.
Everything was so good. It’s a little hidden gem whole in the wall. Haha
DH wanted to try the pizza since everyone was saying how good it was so we took home a buffalo chicken one.
Today is family lunch with hardly anyone. Haha This seems to be a pattern. My sister and BIL are at parent weekend at my niece’s college. DH is at the Patriots game. Go Pats! They need a win. My DS28 is going to join us today. We are off to Flo’s clam shack again since it’s beautiful, warm and only 2 weekends left.
 
I’m not sure what or if we will have dinner. I just got home from a baby shower and I’m not hungry. The baby shower was at a hotel/spa. I had salad then spinach frittata, with breakfast potatoes and fruit salad. The theme was she’s going to pop so everything was themed to that.

We are having homemade chicken tenders with mashed potatoes and corn tonight. Oh, and I have homemade cheddar bay biscuits to go with it in the freezer. I am going to experiment with making a dipping sauce from scratch - not sure what direction that will go in just yet.

This sounds so good, I'm going to do that tomorrow but with rotisserie chicken for the meat eaters, and plant based chicken tenders for the non meat eaters. And probably a green salad.

For tonight it's grilled salmon, roasted green beans & mushrooms, a rice-bean-corn salad, and sauteed shishito peppers.
 
We had a big lunch after church today. Not sure dinner is going to happen later today. I mentioned I might just be having a smoothie for dinner time and the big guy seemed fine with that. We’ll see. Mhmmmmm 🧐🤨🤔🥤

Update at 6:11. Hubby got into the big freezer and found himself a frozen stash of tortellini soup. 🍜 🥰
