What’s for Dinner Tonight?

Chicken Alfredo from Costco. Hoping to have at least a few bites before we leave for scouts

Tonight's was Creamy Pesto Shrimp Pasta.

Tonight we had BLTs with garden tomatoes and an applewood smoked bacon from my local butcher.

I just made a batch of peanut butter cookies for a work thing tomorrow.

Spent the day with DS-27 and DH at an animal rescue center in Bolton, MA. DS-27 had purchased a gift certificate for a private tour and a capybara encounter for DH a while back and we finally had a chance to go. It was awesome! After a fun-filled day, we picked up DS-29 and had dinner at Not Your Average Joe's. DH and I decided to share jambalaya and the Thai Noodle Chicken salad. Another great day!

The birria taco meat came out great. Tonight instead of making tacos with it, I'm going to make us some bowls topped with corn salsa.

Made steak fajitas last night and will have leftovers tonight and likely tomorrow. I have my first PT appointment tonight and then straight to getting my hair cut so luckily I don't have to cook.

Those look gorgeous. Peanut butter cookies were my maternal grandpa's favorite. I always made a batch when I went to visit him.

DH is in the mood for spaghetti w/ meat (Italian sausage) sauce. We also have some leftover cucumber/tomato salad that needs to be eaten tonight. He'll have a couple garlic knots, as well.

Tonight I’m grilling up some salmon with roasted butternut squash and a big beautiful chopped salad. Made my own blue cheese dressing too!

tonight it's whatever leftovers in the fridge a person wants. tomorrow is already planned out as deli sandwiches for dh/I and fast food for the kiddo cuz we will do our big grocery run (for October) and no way will we be in the mood to cook after we get everything put away.

Speaking of jambalaya, I am making my chicken and andouille version. Make it often. Solid option for get togethers and every day meals.

I have some andoulli and shrimp in the freezer, bell peppers and onions in the fridge. I've been thinking of pulling it out and doing some kind of jambalaya pasta. I figure I can use all the same seasonings I use for jambalaya but maybe more of an alfredo sauce? maybe this weekend.
