So, since I've been recovering from what we suspect was food poisoning and I'm still not right.

We're going to go safe with steak tips and either noodles or mashed potatoes tonight.
We have to take a roadtrip tomorrow and can't risk getting sick.

DS-28 is joining us for dinner so I'm making one of his favorites (in the oven now), Crumb-Coated Chicken Thighs (also from Taste of Home). I picked up some fresh corn and I'm also roasting broccoli.

I was motivated to cook for myself, so that I have leftovers for meals the next few days. I have some chicken thighs marinating in my lemon garlic garden herb sauce..sides will be roast red potatoes and watermelon cucumber feta salad.

I really liked it!! flavorful, but not overpowering at all. Very tasty, and I will totally make it again as y husband also enjoyed it.

I also liked that it is very easy to make the spice rub, and any excess 'rub" can keep in a sealed container until the next time.

Does anyone have an Asian cucumber salad recipe they can recommend? I’m thinking of making one on Saturday and have been looking at recipes.

I really liked it!! flavorful, but not overpowering at all. Very tasty, and I will totally make it again as y husband also enjoyed it.

I'm so glad you like it! I have tried many salmon recipes but this one is by far our favorite.

I also liked that it is very easy to make the spice rub, and any excess 'rub" can keep in a sealed container until the next time.

I actually quadruple the spice rub and keep it in a sealed container so it's quick and easy anytime I have salmon on hand.

DH opened the door at home yesterday & immediately said,"It's hotter than fire in here". He checked the thermostat & it was 103 degrees inside. Obviously, the AC wasn't working. Who knows how many days it had been messed up? The shampoo & conditioner in our bathroom had expanded & ran all over the shower. It was that hot! Back to the car we went to call a repairman. Five hours later it was fixed, but it was still way too hot to cook.

DH seized the opportunity to order the triple pepperoni pizza he had seen Marco's advertising on TV. I ordered a Greek salad that I didn't end up eating. Hopefully, we'll be having something homemade tonight.

That's a positive to living in South Florida. We have several AC repair companies that work 24 hours to choose from. Of course, they're needed. We have a large population that runs AC year-round.

We're having grilled chicken breast & corn-on-the-cob. I'm going to add 1/2 of the Greek salad that I didn't eat last night. DH isn't a fan of olives or banana peppers, so he picked up a Caesar salad kit for himself.
