What’s for Dinner Tonight?

Mushroom pork tenderloin, sweet potato fries in the air fryer and green salad.

(I will be using the oven and do often....can't stop in summer or we wouldn't have some of the things we like. Due to be 111-112 through Sunday)
We try to use the stove top, air fryer, or grill as much as possible in the summer, as there is no air conditioning in my house.
 

Let us know what you think, after you try it. I may have to try that too.
It was delicious, quick and easy! I made a couple modifications: I used red wine vinegar instead of lemon juice and shallots instead of red onion. I also used the whole can of chickpeas cuz I didn’t know what do to with the rest. DH says to put this on our “favorites” list!
 
We returned to the French restaurant we ate at a couple nights ago. We felt we ordered poorly & wanted a do-over. We're finally going home for a week, so we decided to throw caution (& diet) to the wind & celebrate the small things. We started with foie gras, followed by pate, then crabby lobster. We finished with the raspberry cheesecake & port that we had previously.
 
Last night was chicken Cesear tacos. Carb balance wrap, spread ground chicken on one side, and grill (electric griddle or blackstone) for 3-4 minutes, flip to lightly grill the other side and ensure chicken is cooked through). Add Cesar salad, sprinkle grated parm cheese and top with croutons. Fold in half (like a taco), and enjoy!


Tonight will be slow cooked Asian influenced short ribs, with rice pilaf and a side salad.
 
last night: Greek chicken with corn and pesto pasta

tonight: salmon... going to try that sensational spiced salmon one of the posters talked about.. with some cous cous and corn
Can you post or share the post about the salmon? We love salmon and eat it often, but I'd love to see about a different style of seasoning or preparation.
 
Hmm.Hmm.Hmm. Not sure on dinner for tonight. Hubs is golfing and then has a work dinner, which he keeps asking me to go to,
Yeah. No thanks. Maybe a fun salad? Craving watermelon.
