What’s for Dinner Tonight?

This is our last night with DS for awhile, so I'm going to try to adapt his favorite pasta dish to make it a little healthier. Hopefully, it will be edible. I'll also make the guys some garlic bread out of bread that came with the pizza a couple of nights ago. If nothing else, they can fill up on bread. :p
 
Defrosted some black eyed peas and added tomatoes, cukes and chopped summer squash for a vinaigrette. Serving it with garlic chicken and a side of field greens. DGD is only here until Saturday morning so better get back to remembering how to cook for one, lol. She’s making her rounds visiting family here, Canada, N.C. and the Caribbean before she’s back to school.

Well, I unintentionally lied to you guys last night. When I was making dinner, DS came in & said, "Do I smell meatloaf?". He was actually smelling the ground chicken that I was turning into Italian chicken for an Italian sausage substitute. Naturally, mama couldn't leave without making him a meatloaf that he sounded so excited about, so we delayed our departure another day.

Dinner is going to be meatloaf, mashed potatoes & broccoli. Since we're staying specifically to make meatloaf, I'm going to use my usual ground beef, pork & veal mixture instead of ground chicken or turkey. I'll just have to pass on it & eat the sides. Maybe, I'll sneak a bite or two. :rolleyes1

Made shrimp scampi, Cubano style and will serve it with the remainder of the black eyed pea vinaigrette. Added yellow rice for DGD cause that’s how she rolls.
Dessert will be a flour tortilla sprinkled with sugar and butter bits, then broiled covered with peach slices. Brush with apricot jam and serve with melted vanilla ice cream for a make believe crème anglaise sauce. Thank Jacques Pepin for this easy make confection and the amazing ways he can think up a short cut💕

The man was the “King of Meatloaf in August”. I finally conceded the kitchen to him for 3 days during the month (he was a sharpshooting Army cook during ‘Nam) and he could do whatever he wanted as long as the meatloaf had the 3 ground meats and no Franco-American beef gravy in a can was used….

Well out of nowhere I got a "spend $75 save $40" coupon for an online order at Acme. We rarely go to Acme because it's expensive, but I spent awhile this morning clipping coupons, scouring the ad, and ended up getting about $86 dollars worth of groceries for about $39. You had to be a bit strategic because the coupons came off first and then the spend needed to be $75, but I think I did pretty well getting 30 eggs for $4.83 etc. So that worked out and no fee for pickup.

Then I was able to fill in a few things (16 items) from Shoprite (our usual store) that were on sale so spent less than $40 there as well. So hopefully we can stay out of the grocery store for another 5 days or so. But I think we got our money's worth today.

TLDR: All that to say we got fried chicken again for dinner (easy to reheat in the air fryer while doing door dash) which should last us 2 meals at least, usually 2 1/2. Spending $80 today should keep us out of the grocery store until at least Wednesday. Chugging along over here and making it work.

I'm roasting some potatoes, carrots, onion, and celery with a kielbasa with Cajun seasoning. We'll have some applesauce with it. I'd rather be having hardcorestich's butter chicken!
I love making recipes with Kielbasa. I was wondering if you used a sauce of any kind on the roasting mixture????
One of our favorites is so super easy and quick and always tastes delicious. Here it is:
I use 1/2 of a kielbasa sausage (for 2). I cut it into bite sized pieces and fry along with some white onions. Then I use a package of Spanish Rice (Uncle Bens is the best) with 2 tbs of water. I add this when the sausage is done. Just stir til warmed up and serve. It is great!
