What’s for Dinner Tonight?

Well, our plans got blown out of the water. DH woke up sick. We won't get to go to our planned event, but I'm going to suggest that DS go. There's no reason he should miss the fun. Fingers crossed that I don't get it. Someone is going to need to drive tomorrow.

I have leftover salad from last night & may nuke a baked potato for me. I haven't had one in ages. I'm going to have to scrounge around DS's fridge & pantry to see what I can come up with for DH. Unfortunately, there aren't many businesses open here today to get take out.

We went out to breakfast. I had the red, white, and blue French toast.

I went to a friends pool party/bbq. It’s a big party she has about 100 people each year.

They had burgers, dogs, pulled pork, wings, a corn pasta salad (it was really good), potato salad, regular pasta salad, green salad with strawberries and blueberries, fruit salad, dorito salad, coleslaw, lots of apps and desserts.

I had a sampling of the non meat sides. DH said the pulled pork was really good.

I ended up making chocolate almond cupcakes. I couldn’t find local blueberries to try the cookies and I needed a larger serving than the brownies but both are in my future baking list!

We made Coney dogs and sweet potato fries for lunch yesterday. Dinner last night was supposed to be lasagna but it didn't come out right for some reason which is weird b/c I've been making this for a very long time. So husband made steak tips and noodles to replace it lol.

Tonight, IDK yet. We have leftover turkey burger we could do something with or just have a pizza. I'll be back to update later.

Leftovers for dinner tonight! Next up this weekend food wise is our patriotic brunch on Sunday!

After years of working every major holiday, my husband and I make it a point to celebrate in a big way now. It’s become a tradition that we host an open house brunch for friends, family and neighbors the Sunday after the 4th.

We ate the pizza for lunch just now and have decided on butter chicken and gnocchi for dinner. :)
 
We’re in the car heading back home after a week in Carolina Beach, NC. We had more misses than hits with the restaurants for dinner. Did better with our own cooking.

But we had an amazing breakfast on Thursday at a place called Kate’s Pancake House. The “kids” and I got pancake samplers that were basically dessert for breakfast-there were peanut butter pancakes, s’mores pancakes, double chocolate, Boston cream, berry pancakes red velvet with cream cheese frosting, etc. DH got crab Benedict that was out of this world. I wish we had a few more days so we could have gone back because I would have definitely gotten that!

4th of July consisted of finishing off everything in the condo so we had some leftover hot dogs, brats, pulled pork, fried chicken, Mac and cheese and fruit.

4th of July: I made pulled pork (slow cooker for 8 hours on Thursday using root beer as the braising broth) with Trader Joe's yellow carolina BBQ sauce instead of red BBQ sauce (it's not as sweet). Hash brown casserole (our Utah roommate called them "funeral potatoes"). DD made homemade dips/veggie tray, watermelon, and red/blue poke cake. I made lime meringue pie (filling was good but the meringue shrank for some reason) and strawberry pie. The strawberry pie was a failure. I didn't cook the filling enough so it never really "set up." It was still tasty, but could have easily been served over vanilla ice cream instead.
Saturday: I'm at my sister's so we ordered take-out Chinese: Teriyaki beef, crab rangoon, and pork egg foo young. I'm having some EFY now for breakfast!
Sunday: No clue. We're going to go on a driving "venture" so we'll end up eating whatever we find along our way that looks interesting.
