What’s for Dinner Tonight?

My fridge is pretty much empty, so I need a run to the grocery for dinner and the 4th. Might smoke a brisket. What’s everyone making for the 4th??

We're going to my sister's house for dinner, then to watch her town's fireworks from her front porch. We're traveling in for it, so I'm just picking up some drinks. They're having it catered from a local restaurant. All I've heard so far is chicken tenders, salad and dessert. I'm not sure what else. They were kind enough to order me a grilled chicken breast, since I've had to limit my diet. Apparently, they want to keep me alive.

We are going to a friends for the 4th. They have a huge party with close to 100 people. It will be potluck but they have burgers, turkey burgers, and hot dogs.

I usually bring a dessert but have no plan. If anyone has suggestions let me know. In the past I’ve done Christmas in July with holiday cookies, cupcakes that look like hamburgers (frosting on the inside), flag cake, frosted brownies, lemon bars, and fudge.

These are soooo good! But I cheat and use boxed brownie mix for that part of the recipe.

Here the 4th is the same traditional things we've done for 40 years.....just less of it. 7 people instead of 80-100.
Grilled burgers, dogs, some kind of other sausage, potato salad, cole slaw, watermelon, pineapple, strawberries, chips, nacho sauce and tortilla chips.
Dessert ice cream bar.

Oh wow, that sound like a big bash for sure!!! Your desserts are always spectacular...can't wait to see what it will be. YUM!

Just thought of a suggestion...something with seasonal berries? Like a pie or cobbler?

Pulled out a package of pork chops this morning to defrost. Not sure yet what I'm going to do with them yet - either smothered chops or "Cheez-it" pork (basically coat them in crushed Cheez-its and bake them.

Lots of cooking this weekend, with a couple groups coming up to our lake house. On the 4th, we're going to do burrito bowls, with cilantro rice and a variety of grilled proteins and veggies. Saturday might just be casual - burgers and hot dogs. Or I might break out the Ooni and do pizzas. Sunday, my wife is having some old work mates up and I'm doing Italian - chicken parm, homemade manicotti and caprese salad.

Have you tried another berry? I can get local raspberries but blackberries aren’t in season yet.

Everything sounds delicious. I'm intrigued by Cheez-It pork chops. I've wondered about the Ooni. Which model do you have, and would you recommend it? Any drawbacks or things to be aware of?

I have the Koda (1st generation). It's the propane gas version. I've had it like 4 years and really like it. The important things (IMO) are 1. having a good place to put it - I bought a cart that it sits on and it helps to be able to wheel it in and out of our garage and 2. keep a close eye on the pizzas - the thing can get realllllly hot (I always have an infrared thermometer to check temp) and can burn in a matter of seconds. You need to keep it constantly turning to make sure it cooks evenly. The first time I made a pizza, I walked away from it for literally a minute and came back to flaming pepperoni.

The propane one is very easy to use. Just attach it to a tank and start it up.

The only equipment you really need is a good pizza peel that you can also use to help spin around the pizza once it's in the oven.

I probably use it about 3-4 times a year, so it's not a regularly used thing, but it's fun to have and normally bring it out when we have a group over, so everyone can make their own pizza.

It hit 90 this afternoon, so dinner will be simple. Hot dogs on the grill, a pot of Kraft mac-n-cheese, and a veggie tray from the grocery store. The little guy is coming for overnight, so he'll be happy with this. If DH needs more nutrition, I have a bag-o-salad in the fridge.

For the 4th: I miss big old fashioned family get-togethers like we used to have with DH's family. Ahh, the good old days (before my SIL let her friends call DH a 'libtard' and she said 'yeah, don't know what happened to him I alwasy thought he was smart', and stuff like that... online, on FB, where we could easily see it). Anyhow... We are going to DD's for the afternoon. I'm making pulled pork in the crock pot and will either get some corn on the cob or make a potato casserole. Depends on how hot it is and if I want to turn on the oven. Dessert will get the same judgement: Either rice krispie treats or strawberry pie. I think DD is making cole slaw and a fruit/veg tray.
