What’s for Dinner Tonight?

Some iteration of chicken soup. Stock is already made. I need to shake down the fridge to see what we have for veggies, not sure if it'll be with pasta or rice. I'll also make some rolls or bread, maybe grilled cheese sandwiches if someone needs more than soup to fill them up.
 

The last recipe left from last week's meal subscription box - Bang Bang Salmon bowls. Quite nice with sweet chili mayo, diced avocado and a rice-wine vinegar dressed slaw with red cabbage and radish. As much as possible, we never order the same thing twice from the subscription service but I'll definitely get this one again when it comes back up in the rotation. :goodvibes
 
Tonight, it’s time to tackle the leftovers and make something of them. I’ve ratatouille and chick peas left and I think I’ll turn it into a soup by adding some roasted tomatoes and chicken broth. Maybe I’ll add a few ricotta dumplings to it?
Can never go wrong with adding ricotta...to anything!
