What’s for Dinner Tonight?

We were supposed to have turkey burgers but it was so raw and cold here today I decided to throw together a fast pot of soup when I got home. Chopped up onion, carrot, celery and threw that in a pot to saute a little, then added some frozen butternut squash and some frozen charred corn. Then added a quart of beef stock, a quart of chicken stock, and a can of crushed tomatoes. While all that was simmering I baked off some frozen meatballs that I then cut into quarters and they went in the soup, too. Garlic, basil, oregano, a bay leaf... shot of red wine and some A1 sauce, S&P. Literally, I was just throwing whatever we had into a pot. Served it with ditalini and crescent rolls. It truly hit the spot on this cold, windy night, and there's plenty left for the weekend.
You're really knocking it out of the park with your cooking creativity lately. Good for you.
 

Tonight will be Dan Dan noodles with peanut sauce. Found some leftover sauce, 1/2 lb of ground pork and snow pea pods in the freezer and I can build up a dish from there. Sent my home attendant a texted shopping list on Monday in anticipation of returning and whatever the political winds bring, so I’ll add fresh spinach, radish and kale to it.

Wandering around the house looking with “new” eyes today and I think reorganizing the hall closet would be a good thing. Time to start dreaming 😊.

We had chicken Parm last night. I came home from work and started it but had to run back out to work with a student for an hour. Ds finished off the rotini while was out but wasn’t sure about draining the pasta. He didn’t, so it was a bit bloated😂, but it all still tasted good. And I certainly appreciated that he did it.
Tonight we ordered a Sicilian pie and garlic knots from the local pizza place.
 
We had to empty a closet so the electrician could get to the crawl space. I went through everything before putting it back today. Donated 4 garbage if clothes and tossed a bag of garbage. The closet looks so much better! Perhaps it will motivate me to clean another.

Still eating from the freezer. Tonight was a lasagna I made a froze a few months ago with salad. I have started making small lasagnas that are 4 slices. Which means my recipe makes two, freezing the second has been nice and we don’t get sick of it.
 
Been a busy of couple days on the road after a 2 1/2 hour flight on Friday. Celebrated our granddaughter’s bday with a homemade lunch of chicken tacos, salsa, chips, guac, cilantro rice, etc! She smashed a carrot cupcake and we all ate one too! So yum!!

Now at a hotel close to the airport we fly out of tomorrow at zero dark thirty back to home. Had a side salad with a side of fries and a glass of Chardonnay for dinner. 🤣
