What’s for Dinner Tonight?

would you share please? I'd love to make it.
diced tomatoes-entire can (including liquid)
canned corn-drain/entire can
pinto beans-drain/entire can
black beans-drain/entire can
cream of chicken soup-entire can
green enchilada sauce-entire can (I get the 10 oz can)
canned chicken-drain/entire can (or if you have left over cooked chicken to dice or shred)
can of chicken broth/entire can

taco seasoning to taste/combine all/ bring to a boil/reduce to a simmer for 5 minutes.

not my favorite but my kid loves it and it's so freaking fast to throw together.
 

Snowing here too. More running around but I may have finally found a flooring option (putting LVP in the new space but it meets with my hardwood floors so it’s been a whole what looks not awful near the current flooring).

Anyway we had chicken and dumplings. It seemed like a good night for it with the snow.
 
Tonight I’m making oven baked ribs, corn on the cob, green beans, and deviled eggs.
I should have done deviled eggs! I’ve got one kid here who doesn’t like mac and cheese and neither likes potato salad, we just ended up skipping a side with our ribs. Deviled eggs would have been perfect. I wish I had been reading this earlier.
 
Finished making up our Lunar New Year guest list with GF and it was decided to have the party at my house. Still fiddling around with our menu but sure we’ll get it together by Tuesday, hopefully.

Got a lovely piece of halibut and made it into almond crusted slices with fennel slaw. Served it with a cup of asparagus soup to start. Dish of vanilla sorbet for dessert.

Dinner last night was hot dogs (red ones), baked beans (not homemade, but a can of navy, a can of kidney, a can of black beans, doctored), canned brown bread (fried in butter), and salad. Typical New England Saturday Night Supper, even though it was a Sunday.

Tonight we are having roast chicken with stuffing, and I'll roast potatoes and carrots around the chicken. It's kind of a hard day here, so I'm going with comfort food. Also I'm sick (think it's a reaction to the dust and crap I was exposed to yesterday while pulling ceiling tiles at DD's new place) so I'm not feeling like being very original, or putting in a lot of effort.

I made chicken fajitas and Spanish rice.
You just sparked an idea that I'll have to try and put in the memory bank. I used to make a Spanish style rice and toss some shrimp in to make it an all in one meal. Haven't done that in a long time. Maybe I'll steal that idea for next week.
Also getting snow today,,, all the talk of chili has planted a seed. Tonight will be chili-mac
I grabbed stuff to make some chili mac later in the week.

Tonight I'm baking the turkey pot pies I assembled yesterday. We'll have one for dinner, dropping one off for in-laws and I'll cool and set aside the third to package up for their freezer.
 
Edited: Cold cut sandwiches as I am tuckered from dealing with the new snow and dont want to get dressed to go get anything. I have to cook for my old dog who has decided life is too short to eat canned anymore... so her dinner is (all week)

ground beef.. liver... pumpkin... and rice

I tried something new tonight Creamy one pot pesto chicken pasta. It wasn’t bad but needs some tweaking. The sauce was a little thin, next time I would cook the pasta in the broth and milk to thicken it. I added spinach but not the sun dried tomatoes (didn’t have any and I didn’t go today). It has a spinach artichoke dip feel to it. DH said artichoke hearts would be good in this, so he got that vibe from it too.
