What’s for Dinner Tonight?

Wrapping up the loose ends on this end.
The house chores are down to those normal daily tasks with the last hopefully accomplished the night before I leave. Found a close bodega to buy ice which I’d worried needlessly would be hard to come by. Started tracking the cost of an Uber to the Amtrak station; going to be an “ouch!” moment but still beats taking an airplane. Need to go to the bank and take out cash to tip the building staff- wouldn’t it be nice to just Zelle them? Certainly easier.
Got to pack clothes in the suitcase but waiting for a delivery tomorrow.

Rooted through the existing foodstuff and decided to make a salad Niçoise, easy peasy and most every ingredient on hand. No fresh tomatoes but I do have some roasted ones and that will suit fine. A sliced apple and some mixed nuts for dessert.
 

We're getting a bit more organized around here this week. It helps that I've had jury duty but have been out by noon each day. Monday I made a white chicken chili with rice, rolls, bagged salad. Tuesday DD and I were out for supper so SIL/DH/8yo had omelets, english muffins, and fruit. Wednesday I made an american chop suey casserole with parmesan pull-aparts and salad, and tonight we had an Asian-style veggie soup (miso broth from Trader Joe's, tofu, baby bok choi, carrots, red pepper, water chestnuts, udon noodles, scallions, celery). I worked until 9pm so did all the prep this morning, then DD boiled up the broth, dropped in the veg, and voila! Supper!! Not sure what they had with it, I was content with just the soup. TOmorrow night will be pizza, as it's "decorate the Christmas tree" night!
 
We had “Mexican” too. It was a thrown together casserole using the leftover stuffed peppers from a couple of nights ago. I chopped those up with some taco seasoning, a can of kidney beans, some pepper jack cheese, salsa and tortillas. I “lasagnaed” it making two layers. Baked it until the cheese melted and it tasted pretty good to me!
 
Didn’t get the parcel delivery until late so suitcase packing is for the morrow. DGD arrives on Wednesday so it’s really on. Have a few last minute runs for to her make but since they are Manhattan stores she’ll be happy, lol.

Tonight, it’s the salad Nicoise leftovers with avocado added to bulk it up. The vegetable bin is getting increasingly empty.
