What’s for Dinner Tonight?

I’m rolling and frying up a big batch of flautas. Two kinds: chicken and potato. Going to make a warm ranchero sauce to drizzle on top, then they get layered with thinly sliced green cabbage and cojita cheese. Going to refry some beans in bacon drippings the old school way for our side. One of my favorite meals from childhood. I always feel my mom’s spirit with me when I’m making her recipes.
 
Headed to Costco for new tires on one car and rotation on another. Think I will pick up a rotisserie chicken and use it for salads. Unless something else looks good.
 

Another clean out day: chicken broth, spinach, corn, peas and Chinese dumplings from the freezer.
Add fresh carrot, lettuce, chopped scallions and cilantro from the fridge.

With the help of various seasonings you’ve got an Asian style dumpling + veggie soup.
 
Tonight was a "throw together" meal. Coarse ground bratwurst with grilled onions on rolls with slaw and chips. It was a busy weekend, the usual weekend chores got pushed off until today, and I feel like I've been running, running, running all day! Dinner wasn't even very tasty, but at least it was easy and the kitchen is now clean.
 
Busy day and despite taking meat and prepped food out of the freezer yesterday, I just wasn’t in the mood and decided an omelette would satisfy.
Filled it with ratatouille and Muenster cheese, made a green salad to serve on the side and dinner is done.

I’ll probably have some strawberry sorbet for dessert.
