I agree, Mr. Sanchos in Cozumel is a great take on your own. Grab a cab outside of pier, $15 one way for the cab. They have a few small vendors on the way in, beach is free, as well as aa "cold" water type jacuzzi. They charge nominal fees for use of water trampoline ($6 I think), the food is reasonable and good (what we encountered), and it is not a crowded scene, you can pretty much guarantee a table under a palm for your self. Grand Cayman, you really should not miss the stingray city tours if your kids are into water and snorkeling at all. I think Captain Bryan's was $34 each, which includes your transportation. It really was fun; my 7 year old had a blast, as well as 12 year old. And then you can do Seven Mile Beach for free. Each hotel has an adjacent "walkway" you can use, and if you get hungry or thirsty, use hotel patio or waiters.
