I am looking for budget friendly weight watcher recipes. Any ideas would be awesome, meals, snacks, desserts, etc... Thanks!!

Her recipes range from the cheap to the expensive.

The best WW recipe I know of is a crockpot recipe: boneless, skinless chicken breasts and a jar of salsa, cooked on low for 6-8 hours. You can add corn and/or canned black beans (rinsed and drained) if you like. Serve over brown rice. You can also add a dollop of FF sour cream when serving.
 
I have some from 3fatchicks.com. You could look them up. One that my DS16 loves it to lay chicken breasts out then cover with Ragu spaghetti sauce. Bake until done. Serve with veggies on the side.

My leader gave us the recipe of heating a wok or similar pan. Put a little EVoo in bottom. Saute veggies (carrots, caluiflower, broccoi & any other you like). After they have sauted add 1/2 can of diet cream soda or diet root beer. saute until the liquid has mostly cooked out. She said the whole pan was 1 point! Even my boys loved this.
 
This is one of my favorites:::::

SOUTHWESTERN CHICKEN-BEAN SALAD

2 Medium scallions, chopped
1/2 Medium sweet red pepper, chopped
1/2 medium bell pepper, chopped
15 oz. can black beans, rinsed and drained
2 pieces corn on the cob, kernels removed
(can substitute can of Green Giant niblets, rinsed and drained)
2T. fresh lime juice (1/2 lime squeezed)
1T. corn oil (can substitute canola oil)
8 oz.+ cooked skinless chicken breasts, chopped to bite size
2T. reduced sodium taco seasoning, about 1/2 a 1.25 oz. packet
4 T. fresh cilantro, chopped
4 T. low fat sour cream, optional

Combine scallions, peppers, beans and corn in a large bowl, toss until well mixed.

Add lime juice and oil to bean mixture, toss to coat. Add chicken, taco seasoning and cilantro, toss. Top with sour cream and serve. Yields about 1 1/2 cups salad plus sour cream per serving.
 

I make a bolognese sauce using chopped turkey, a jar of Italian sauce (whatever is on sale) and a can of crushed tomatoes. Easy and delicious. I use pam with olive oil in the saute pan with garlic. Brown the garlic and then add the chopped turkey. As it is cooking I sprinkle on Italian seasonings, onion salt and pepper. Once the turkey is cooked I add the jar of sauce and the crushed tomatoes bring it to a boil and then let it simmer for 45 minutes to an hour. I put this on either Dreamfield pasta or whole wheat very healthy and very delicious.
 
Here are a few of my favorites:

Chicken Fried Rice


1 cup Egg Beaters
1 medium garlic clove (minced)
1/2 cup frozen peas
2 cups cooked brown rice
1/2 cup scallion onions chopped
12 oz chicken breasts (skinless and boneless)
1/2 cup diced carrots
soy sauce

Cut chicken into 1 inch cubes.

Spray fry pan with PAM - over medium heat, cook eggs until scrambled - set aside. Recoat skillet with spray and saute onions and garlic. Add chicken and carrots - cook until chicken and carrots are done. Stir all other ingredients together and heat until peas are hot.

1 cup = 3 points

Sweet and Spicy Chicken

1 lb boneless, skinless chicken breast cut into 1/2 inch cubes
3 T taco seasoning
1 or 2 T vegetable oil
1 jar chunky salsa
1/2 cup peach preserves (sugar free or low sugar)
Hot cooked rice

Place chicken in large ziploc bag, add taco seasoning and toss to coat. In a skillet, brown chicken in oil. Combine the salsa and preserves; stir into skillet. Bring to a boil. Reduce heat and cover. Simmer for 2-3 minutes or until meat juices are clear. Serve over rice.

I hear you on the budget part. It ain't cheap to always eat healthy!
Fats and starches are cheap. Dairy, protein, veggies, fruit are not so cheap.
I try to buy veggies/fruit in season & then there are some I grow in my little garden (lettuce, herbs, peas, raspberries, rhubarb, etc) & others I pick for free (blueberries, partridgeberries).

The Hungry Girl site & WW site (forum) have lots of recipes & ideas.

I especially love the WW 0point veggie soup, it freezes really well, and I will add a couple extra points by throwing whatever turkey/chicken was leftover (I just freeze everything and then make the soup when there's enough odds & ends!).

Yes!! I second Gina's recipes. I've made several of her recipes and my husband loved them, despite their low point values. The spinach meatballs are so good. I'm pregnant now so can't do WW, but I still have a bag of the meatballs in my freezer. It will be in my go-to recipe box forever.
 
I like the zero point soup recipes (they're all over the 'net). I never follow the list of what's suggested; I use whatever veggies I have sitting in the fridge, making it pretty budget-friendly.
