How do the weekly rentals work? Is it truly a week?

If you mean the weekly points required on the point charts, yes they are per week.

Theoretically I want to stay from a sat to the next sat is that considered a week if I was to use the weekly points? Just want to know to help budget the points/flights.

weekly points are 7nights. It's just listed to save you time in adding up the nights. There is no saving points by booking a week, just add up the weeknights and the 2 weekend nights and that's the total.

You can set up a "weekly rental" however you like. As pp stated what's listed is for convenience if you were thinking of Fri&Sat followed by Sun-Thurs stay or
Sun-Thurs followed by Fri & Sat stay or
Sat followed by Sun-Thurs + Fri stay ( weekly total you see just mean 5 weekday nights plus 2 weekend nights, unfortunately no points savings by booking weekly )

But if the week falls into two or more different seasons, you can't use the weekly points to determine how many points you need for the week.

For example, Thanksgiving week has a change right in the middle of the week. You have to calculate your seven nights by individual days.
