We went the week before Easter in 2004. We left Good Friday to go to my nieces birthday party in Miami, then stopped on the way home for another day & night at WDW in the middle of the next week. We mostly went to MK at night, since it was open until midnight and it was just DH & I. One morning we did an early morning KTTK tour at Mk and were going to hang out at MK the rest of the day, but the crowds were so heavy by about 2 that we had to leave. We went over to Poly and rented a water mouse for an hour or so and hung out at Poly and GF (ate dinner at Gasparilla's, love those Philly Cheesesteaks!) and then headed back as the crowds were thinning out. caught WISHES and 2nd showing of SpectroMagic and it was much better. I would say if you go to a first seating of breakfast at Crystal Palace, then head straight to FantasyLand and do all of those rides befores the crowds get up there, then when things get crazy from the crowds head back to your resort for a swim, lunch and nap, then back for the evening refreshed, you'll be OK! Just be sure to do your breakfast on a day that the park doesn't open until 9, and get your breakfast seating at 8:10 (first seating). By the time you are done eating and get to FantasyLand you will probably be able to walk on Peter Pan, Dumbo, Winnie-the-Pooh and IASW with little or no wait. We did that twice! The trip bac through from Miami we got there at about 4PM, went over to MK and were pleasantly surprised that the crowds weren't bad, but it was drizzling rain, so that may have been part of it.
Good Luck, I'm sure it will be a wonderful trip.
