And I have no clue how to plan our days!

All I really know is which days we are doing which parks.
Monday (Dec 2): MK
Tuesday (Dec 3): Epcot
Wednesday (Dec 4): MK
Thursday (Dec 5): AK
Friday (Dec 6): MK

On Friday, the girls are doing BBB and we have tickets to the Christmas party.
Any tips of what not to miss??

Well, besides Thursday our family will be at the same parks as you will be in. So I would think you are all good on your park selections. Just a few things to note for you:

#1 Monday is EMH evenings a MK not sure if you are planning on hanging that long in park, But find it a good time to hit rides with smaller lines. We also really try to get in those nice outdoor night time rides.

#2 Tuesday is EMH mornings at Epcot. Again do not know if you are planning on attending this and taking advantage of lower lines for the first hour. A great time to hit the headliners.

NO Hollywood Studios???? our family really enjoys it. But since you are doing the MK three days, so should be able to do a lot of the attrations during that time. I would really focus on the Xmas party items during the time of the Party. i would also go to Guest Relations on Monday or Wednesday and ask for a Xmas party map ahead of time so you can see where and when everything takes place to better plan for it. We usaully do not do many rides during the parties.

Ps.. just a heads up if you did not know. On Friday, MK will be taping the Xmas show and parade. The Hub will get very crowded that day so plan around that. They post the time that they are taping the parade. Know when that is and either enjoy it or stay away from the parade route. ( We usally stay creal of it) If you leave for naps it is very hard to get down main street and out of the park. It is really hard to get around when it is going on.

No Hollywood Studios. I didn't care for it at all when I last went. It just wasn't my cup of tea. What is there to do for a 4 and 6 year old. I just know there's not many rides at all and I don't see them sitting for much in the way of shows.

Its funny, I have a now 13 year old girl and a 6 year old boy... We go commando style and have been for our once a year trip for the last ten years. We actually do 2 days there to enjoy everything.
Just putting it out there, by NOT going to HS you are missing out on the single greatest holiday attraction in Disney world....Osbourne lights!!
Plus I really think there is a lot for a kids there, but its not all rides, the shows and attractions always keep us busy. but then again my kids have been going on rides like TOT since they were tall enough. To be honest son is probably one of the youngest unoffical rides of TOT. (he justed turn 3 years old the first time he went on it) But again that is our family, AK is actually our least favorite, we will usually do that park on the day we are doing the Xmas or halloween party because we usually leave the park by 3pm.

Since you are NOT doing any of the EMH you might want to re think doing MK on Monday and Epcot on Tuesday. (at the very least rethink Epcot, There will be more crowds there in the am because of it and you will get stuck behind longer lines and crowds coming later. Because the crowds won't be huge it not nessasary but something to think about. A Lot of people will say to stay away from parks that have EMH if you are not taking advantage of the perks.

Oh gosh I can't imagine not doing Hollywood. It's our favorite park with Toy Story Mania and TOT. We love the shows too and my 13 year old has to see Vanellope (sp?) every time we go.
The bad part about Hollywood in my opinion is the lack of good table service. We do like pizza planet a lot though.
