Yep - anyone can go into the baby centers. The only exception is the nursing room at MK - it's not private (some of the parks have private little rooms to nurse, others have a bigger room) - and men aren't supposed to go in there I believe. But TONS of guys everywhere else in the baby centers.
btw - we took our youngest at 10 weeks - it's WAY easier than now, at 21 months.
I agree w/ not overpacking - we have a stroller that has a side bag and a bottom area - we use those for diapers, etc - and it's great not having to carry a bag! When our son was very young, the Baby Bjorn was fantastic at WDW (and elsewhere of course) - very easy to carry him all over in that and he was happy as a clam in it.
