WDW vet starting to plan DL trip and need help from the experts

UPDATE...

Finally bit the bullet and bought plane tickets yesterday. Flying round-trip into John Wayne instead of flying into SD since we realized one of the vouchers we were trying to use had to be on a round-trip ticket, not multi-city. This will be a bit more driving on arrival day but will cut the rental car rate in half.

Thanks again for all the help! Next step, figure out dining since 60 day window opens soon. I know there is not the same urgency when booking WDW dining but still want to at least give it some thought as Blue Bayou is a must!
