I'm having a hard time figuring out our itinerary/logistics for our "break day" and seeking expert help!

Staying at Pop. Would like to sleep in a bit, relax and head to Downtown Disney for lunch at Wolfgang Puck Express/shopping. - TRANSPORTATION - Bus to Downtown Disney

Fishing. I think Port Orleans cane pole fishing ends around 1pm, so this might be out. I think I read that fishing at Fort Wilderness ends at 5pm? - TRANSPORTATION - Boat from Downtown Disney to Fort Wilderness. I have no clue how to get from boat landing to cane pole fishing area. Any ideas? If we take the bus from Downtown Disney to Fort Wilderness, does it put us closer to the fishing?

Chef Mickey's 5pm. Boat to Magic Kingdom and walk?

I don't know anything about fishing. But I do know that the Downtown Disney boat will take you to Port Orleans French Quarter and Riverside and no farther. It does not go to Fort Wilderness.

To get to Chef Mickey's from FW, yes you can boat to MK and walk. But there's also a boat that runs between Fort Wilderness and Contemporary (also stopping at Wilderness Lodge).
 
Bus from DTD to FW, internal FW bus to the meadows trading post, there you can fish (use hot dogs from the shop close by, not lures... You will catch more!) then you can walk or take the internal bus to the settlement at FW. There hop on the boat to Contemporary. Have fun! The Fort has so much to do and is lots of fun!
 
PORS does have cane pole fishing. It runs from 7a until 1p (iirc). Costs about 4 bucks per person (though there's a flat family rate too, iirc). It's catch and release. Bait includes hot dogs and worms, and is a 30 minute thing.

The issue with Ft. Wilderness is the timeframes for transportation. To get back to the Bike Shop/Trading Post is gonna be a haul. Then from there you'll take the internal resort shuttle on a rather long ride, then a walk to the dock to catch the Blue Flag which will then stop at Wilderness Lodge before heading on to Contemporary.

Almost better to do your original plan, hit up PORS, and then snag a Magic Kingdom bus from PORS, and then walk (or take the monorail) to Contemporary (I'd just walk myself).

The DTD boat will dock at the Marina (marked letter E). Then it's a short walk to the "Fishin' Hole". It is marked on this map.
