WDW for MIL that hates crowds and rides!

I'd take this advice. I noticed that you've been to WDW several times, so why not take a break from all-day commando touring and take it slow at times. You can get up early and ride all of your must-dos early in the morning, and then meet up for a late lunch with MIL. Spend the afternoon walking around and just taking in the sites and shows - whatever she wants to do. Not only will you have a better chance of converting her, but you may even discover something you've always missed in your previous dash-abouts. Then when all is said and done, you will have a vacation filled with pleasant memories. You can go back to commando touring next time.
 
Definitely do Epcot World Showcase to enjoy the slower pace and international food and beverages. Definitely go during a slow time - September as already mentioned or December when the decorations are beautiful and storytellers are in Epcot. Maybe the holiday magic combined with Disney magic will do the trick. You should be able to find ways to savor WDW rather than attack the rides, particularly at a slow time of year. I would not try to win anyone over to WDW during holidays or summer! My parents (in their 70's) go with us occasionally to enjoy our kids, but the pace is much slower, we go in December or January, there is much fine and international dining and no character meals.
From personal experience, don't get into a Sake drinking contest with MIL in Japan.
