TBD Dave ... you've hit on a subject that we WDW drinkers have been gnashing our teeth over for some time now.
Hurricane Hannah's used to have some great drinks, including the stormalong which was a tasty frozen drink made with baileys, kaluha, and amaretto ...
Then they pared their menu down so that it basically matched that of every other resort's pool bar. Who in the world at WDW Dining thought that was a good idea except the number cruncher? We don't want to have the same drink at the Beach Club as we do at the Grand Floridian or at Saratoga Springs. For us, part of the charm of staying at such a large resort complex was the wide variety of choices we could find ... and I mean food as well as drink.
And then last year we found out that Disney crossed the Espresso Chiller off the drink menu (we were told that it was because the drink called for Starbucks liqueur ... apparently it's too expensive ...

).
My husband and I have been really saddened to see so much variety taken off the table during the last four years or so. The prices have been rising at Disney pretty steadily for everything, yet they don't seem to be using the profits to encourage much in the way of culinary or alcoholic creativity any longer, with the exception of a few restaurants.
However, there are some good drinks available in Epcot. The Grand Marnier and Grey Goose slushies in France are good, and there are some tasty beer choices at the Rose and Crown.
We've also had some really good martinis at Narcoosee's, even though these are drinks we can purchase here at home: Pomegranate Martinis and Pumpkin Spice Martinis are yummy indeed! Martha's Vinyard still has a decent drink menu, although a lot of their signature drinks have also gone by the wayside. Lemme think ... Spoodles has some great Sangria...California Grill has good variety ...
Our experience now is that you have to be at a signature restaurant to find good alcoholic variety. Most the bars and lounges have similar drink menus, with a few drink exceptions here and there (like the Lapu Lapu at the Polynesian).
