My DD will be 13 during our trip at the end of this month and I would love to have a Birthday Cake made for her. She can not have lactose, frutose, sucrose or sorbitol. Anyone have any experience working with the chef's at WDW? Are they generally willing to try and make something that my DD could eat??? She never gets a birthday cake and would love to surprise her with one.

Well, it would help them if you let them know what kind of sweetener she does tolerate - then they could go from there, I'd expect?

I'm actually in the process of trying to get a gluten free/dairy free cake for my 30th birthday. I will keep you posted on my luck. So far, they have been very hard to get a hold of (used the Cake Hotline and Brenda Bennett to email / call Contemporary Bakery, but to no avail) It's just as difficult it seems to call and get someone for a regular cake too. Sending you pixie dust that you can get a cake for your daughter.

Thanks - keep me posted on how your cake goes. My DD can have Splenda/Equal or Dextrose.

MIL is gluten-free, though not so severe that she cannot have something made in a kitchen that uses flour (like the peanut dust allergy).

That said, DHs b-day dinner was at Flying Fish. I used the cake tips, which I think are on the dining forum. It was basically room service for the BWI. When I finally got to a person, I told them my deal (ressie, allergy, etc). Here's the part I don't remember--if I left a message for the dessert chef and she called me back or if I got right through to her. Either way, she and I made a plan for our gluten-free chocolate cake.

My impression has always been that they will do whatever they can to accomodate, so keep trying. However, I also know my request was nothing out of the ordinary and that my MIL is not too severe.

But good luck! Our cake was amazing and she got to celebrate it with us instead of having to eat ice cream.
