Way ahead of time question

Planning a trip to Orlando 12/17 thru 12/24 at least - maybe longer. It will be just me and my 2 daughters. Anyway, we plan on doing most of our days at Disney in order to see all of their Christmas fun....but really want to do US/IOA to do their rides and see the Grinch...my youngest daughter is a big fan actually lol However I See the Grinch is only at IOA? My kids won't do roller coasters and I know there are several there...so my question is could I do both parks in one day? Probably not, I know... but I'm thinking we could limit to a few rides - the Simpsons Ride, Shrek, Spider Man, and Cat in the Hat/ seeing Grinch, could we do it in a day (with a lot of rushing around I'm sure)?

The Grinch is only seen at Seuss Landing at IOA. If you skip most of the attractions, you could do both parks in a single day but it will be busy with the crowds Harry Potter will bring in. If you can afford to, you might want to consider staying onsite for at least one night so you can get two days of unlimited Express access. That will greatly reduce your wait times and make doing both parks more reasonable.
