Water?

Yes, they will give you a free cup of ice water at any of the CS locations if you ask for it. The default size is the small cup, so if you want a larger cup of water, you will have to specifically ask for a large cup of water.
 

On really hot days I've seen them have cups of water ready to go on the counters so you can just walk up and grab one.
 
If you aren't familiar with Anaheim water, it can taste kind of awful. Just be forewarned. To combat this, a lot of people (myself included) bring little crystal light packets to add to their water bottles.
 
I think the ice water from the CS restaurants tastes fine. The water from a hotel sink or water fountain...that's a different story. We bring bottled water from home and use that to fill our bottles before heading to the parks and then refill at a CS restaurant with the ice water or there are a few places around Disneyland (like Rancho del Zocalo) that have filtered water spigots.
 
I've heard that Disney CMs are instructed to always give water at quick service location to anyone who asks. I've never been turned down.

Yes they look something like the one Tech Guy pictured. The one at Rancho is in the middle of the dining area along with the hot sauce. They keep cups out there too. There was one near the Tomorrowland Terrace too, but I'm not sure if it's still useable or not. I think there's a third one too, but we haven't used it. I've heard you can get filtered water from the baby care center and first aid too.
 
You can indeed get cups of filtered, cold water at the First Aid stations in both parks. Also, the water spigots from any self serve soda fountain machine, e.g. at Plaza Inn, will have filtered, cold water.
 
The third water spigot is at Mint Julep bar next to French Market. CMs will give you a cup of ice water at any CS places that has a water spout. Troubadour Tavern and Edelweiss Snacks don't have water spouts on their soda machines. So there you'll get a cup of ice to fill at a drinking fountain. I don't mind the taste of the water from the water fountains, as long as it's really cold. If I refill my bottle and drink it at room temp later I'm not as happy.
 
Pizza Port also has a self serve soda machine as well that we use to fill up water bottles with ice water. And I agree as long as it is really cold water I don't notice the taste. We have asked for ice water at several places and never been turned down. The only qualification I have heard is this . . . I ordered a soda from a place that didn't have a self serve soda machine and went back after lunch and asked to have my cup refilled with ice water, the CM said she would have to give me a new cup. They can't refill a used cup. You don't have to pay for it and the cup is new so no complaints.

Yeah - the large majority of Anaheim's water source comes from local wells. As a result the water can be really hard, off-color, and with a noticeable odor. However, I thought that Disneyland food/beverage service uses various filters and softeners to reduce the "aesthetic effects" (that's what it says on Brita package). I never really noticed anything drinking the water from Disneyland restaurants.

They definitely filter it, but it still tastes off to me, so I rely on crystal light packets or a tea bag placed in my water bottle.

Interesting. At least at DL, First Aid is right next door, so it would be easy to go there for water. In DCA, the Baby Care Center is farther away from First Aid, but there are so many places nearby in the Pacific Wharf area that can provide cold water.
