Is it possible to just walk up to a restaurant and eat there? Obviously I know some restaurants are all booked up with ADRs, but are there some that have space to allow walk ups.
I kind of want to leave one of our days open and go with the flow.

Not sure about walk ups (usually not), but you can make ADR's a day before, or on the same day. People cancel all the time and you can usually find something!! You will be limited, but also could luck out and get a popular one!! Good luck!

You can but there can be a lot of variables. At MK you can usually walk up to Skippers If you go at an off time. I would check the app the day before or first thing in the morning because people will change plans and cancel.

Skippers is probably one of the restaurants my daughter and I would like to go to, so that's good to hear.

If you go when they first open you should not have a problem. They also have a text system that is great if you have a long wait.They will text you when your table is ready so you don't have to stand there.
 
It is easier at Epcot simply due to the volume of restaurants, and you can also walk over to the Boardwalk area for a few options. We usually go in the "off season" -- if there's any such thing anymore -- and I've noticed that walk-up is very difficult at MK and DHS. You can probably walk up to many resort restaurants as well for lunch, though dinner may be more difficult.

On edit, I just checked Disney's website and there's lots of availability for today at noon (really slow time I know). Best bet is to make a reservation the morning of so that you aren't getting turned away or having a super long wait.

The Plaza on Main Street is now walk-up only except for a few lunch hours. And some of the less popular places have same-day availability so you can make a reservation a few hours ahead. As others have said, the restaurants at resorts have more availability generally (not the character meals) and we've found the signature dining usually has space available at off hours, but you may not want to be eating signature every night.
 
Yes, but there might not be any availability. One time I walked up to 50s PT at MGM and they had availability. Last weekend I walked up to BOG and they said No Availability, but I could check back and see if any spots came open. I didn't bother since noone is going to cancel day of as they get charged a no show fee. The only TS that had any availability at MK was Skippers, so I did QS instead. There were a few available TS ADRs in Epcot plus F&W, but I didn't have enough time to run over there and get back before my next FP+ window ended.
 
Yes, walk-ups are possible but never guaranteed so if you don't mind being turned away, you'll be fine. We typically have success walking up to Spice Road Table and Skipper's, but the last time we went to Skippers it was around 5:30 pm on a party night which may have had something to do with availability. We also had to wait 20 minutes for our table, but they give you a pager so you can continue to walk around Adventureland while you wait.
 
Right now, on the MDE app, you can get reservations for 12:30 at quite a few restaurants, including Skippers. There is availability for 5:30 ish too, including signatures like Cali Grill, Artist Point and Flying Fish. I checked for a party of 3. I'd use the MDE app and just search for an ADR and book it. Mom and I did this in February a couple of times. She wanted a sit down place to enjoy a lite meal and we booked it on the app on the fly. Worked out well.
