Vodka sauce?

I've seen recipes using vodka sauce. Can someone tell me what this tastes like?
 
It's a pink sauce - imagine a mild tomato sauce with cream added to it. I don't like it because I don't like dairy products and I can really taste the cream in it. I can't taste the vodka.
 

I don't put any vodka in mine. I add cream and grated parmesan to my marinara sauce for my version of this. My SIL's adds her Alfredo sauce to her marinara for her's.
 
I used canned tomato sauce, pancetta, onion, heavy crea, red pepper flakes. I add grated Parmesan on top. It's so common here - every pizzeria makes pasta vodka pizza.

That sounds like a fantastic recipe. Do you add the heavy cream when it's cold? I've been buying jarred (Victoria's or Rao's) but had want to try and make my own version.

I take a package of cubed pancetta and chopped onion, sauté for about 15 minutes, add the 28 ounce can of sauce, simmer for about 15 minutes, add cream (I use the smallest container), and cook for another few minutes. At some point I remember the pepper flakes.
 
I do it with red and white jar sauce and add white wine-keep a bottle just for cooking
we don't like a really red sauce ( acid reflux issues)

Canned tomatoes, garlic (gotta have garlic!), a little tomato paste, heavy cream, good Parmesan, and fresh basil with vodka (the alcohol gets cooked off) on penne pasta. The recipe was from Cook's Illustrated and I haven't found a better version anywhere. Mmmmm...good!
 
I'd rather drink the vodka. It is a really creamy light marinara.

My best friend used to make this for my birthday every year. We have an amazing little old school Vegas, Italian place here and I tell myself I'll get something new but I get Penne Ala Vodka with shrimp every single time. I don't make it at home because my family finds it too rich but they'll eat my Fettuccine Alfredo daily if I would let them. I've tried leaving off the vodka and red pepper flakes and/or mixing red sauce with Alfredo but no go. Probably a good thing since it's not a light dish, lol.
 
I make it with evaporated skim milk instead of cream. Thickens up nicely and it's MUCH less rich. You can make it without vodka as well.

FWIW, the NewMan's Own bottled version isn't half-bad. It makes a great quick dinner with some shrimp mixed in.
