On the Viva Italia tour, are there any days besides the Vatican day where the group will go somewhere requiring covered shoulders and knees?

Being it will be July for our trip, we're hoping to pack light and dress for the heat as much as possible.

You'll want to have shoulders and knees covered on Vatican day and the first day in Venice for touring St. Mark's Church. I don't remember the guides specifically saying the dress code for St. Mark's but it's a safe assumption. We did not enter any other church during the actual tour. During your free time in Orvieto and in Florence, you will have the opportunity to visit other churches. If you have the inclination, then you should be prepared on those days as well.
