Visiting Hilton Head- what can you tell me?

I'm hoping you guys can help me out. After visiting family in Atlanta this summer, we would like to take a 3-4 day trip to the Atlantic coast, and Hilton Head comes to mind. I'm not really looking to stay at Disney's resort (though I am not ruling it out) but I am hoping those who have been to the island can tell me something about it. Things to do and see? Places to eat? Places to avoid? Anything you can tell me would be great. Thanks!
 
Places to eat.....

The Sea Shack.

It is just that, a very unassuming place with some of the best and most reasonably priced seafood on the island. Go early, get in line and be sure to read and follow the rules....( order first, know how you want your fish prepared and wait for a table where they tell you to wait) and you will have a great time.

Signes.

A bakery and cafe that serves really great sandwiches, salads and pastries.

This is a small restaurant in a strip mall owned and operated by a dynamo of a woman. She prepares everything from scratch each day and the food is fresh and wonderfully flavored. She learned to cook from her grandmother and mother and learned to time the cooking of her fried chicken to be put on the table when her father had just finished washing his hands. The chicken is to die for and always served piping hot from the fryer. Side dishes include collard greens, black eyed peas, green beans cooked with ham, corn bread made with cane syrup, and all sorts of other yummy things. Dye serves a buffet some days and uses a menu other days. Both are delicious, but with the menu you have more choices and options. Reservations are a MUST as she only prepares what she will need for the day. You will not be disappointed.
