Visiting Epcot over Columbus Day Weekend

If you were to visit Epcot for four hours over Columbus Day weekend what time would you do it (I’m assuming 9-1?) and on what day (Saturday, Sunday or Monday)? Trying to fit in a few more hours there during our trip, but I’m led to believe that it’ll be rather busy at the weekend whilst the Food & Wine Festival is on, so I’m not sure when to go.
 
I would absolutely go Monday if you have any interest in Food & Wine because the weekends are mobbed in the World Showcase during the festival. And yes, I would go at park opening, ride a few rides in Future World, and then sample a few booths once the festival opens.
 
If you’re interested in the food and wine booths avoid Saturday. We went on Columbus Day weekend a few years ago and when WS opened at 11am, we found those food booths got slammed pretty quickly. The rest of Epcot, rides, etc...didn’t seem too crowded though.

The crowds were a bit lighter on Sunday, but I’d imagine Monday would be the best day.
 
With the holiday on Monday, the entire weekend will be busy. If you aren't planning on doing F&W, you might want to head to the park when it opens. But F&W will be mobbed.
 

I think all of those days will be busy, maybe less (and I mean slightly) so on Monday. We visited once on Veteran’s day a few years back (not a weekend - a Wednesday) and even the Marketplace was crazy busy. I guess we underestimated the number of folks for whom that day is a holiday.
