Thank you everyone - you have answered alot of my questions but I have 1 more that hopefully someone can answer without me having to call just to ask.

Do you pay for this in advance when booking or just give a credit card for a hold?

You put a credit card to hold, the charge the card the day of your tour for the 7 hours and then again if you go over.
