Despite visiting Walt Disney World for the past 30 years, we've never dined at V&A's. We now feel that this may be the time. Please tell us how the seatings work, and are there menu choices. Any help would be appreciated. Thank you.
 
There are two seatings every night, around 6 and 9, so you will be offered a time around these two times.

There are menu choices for most courses apart from the first (amuse bouche). There's normally a choice of between 2 and 4 dishes per course, although some choices may carry a supplement. When you make your reservation you can tell them if there's something you don't eat or any allergies and they will accomadate you. If you look on allearsnet there are some menus from V&A there to give you a better idea.
 
Courses (two options per course, except dessert, which has about 5-6 choices):

Amuse
cold app
warm app
fish
meat
cheese
dessert

Although the meal is prix fixe, for a number of the courses, you'll have a third option, which will carry a supplemetal charge (the foie gras, which was a $15 surcharge, is not to be missed).

The optional wine pairing is $60/person.

5th course is not a cheese course but an intermezzo to cleanse the palate before dessert. Last week they offered gelato as one of the choices. Although I had the cheese, DH, who is not a big cheese eater, loved the gelato.

Wine pairing was $65, not $60.

The add-ons they offered were caviar on cold appetizer (two serving sizes), fois gras for hot appetizer, and then the meat course they offered an Australian kobe beef and a more expensive Japanese strip steak. The last two times we have eaten here, they have had these exact same add ons. I did the fois gras and the Japanese strip steak.

It's a long dinner and a lot of food.
 
Seems like the basics you've asked for have been covered - with one clarification...on Sunday nights they only do one seating, around 7-7:30 instead of the two....
