Very specific question about Boma breakfast.

We love it - the best on property!

One of our favorite menu items is a sausage, but it’s very different from normal link sausage. It’s bigger around, and almost a brown color. It is very tender and a little sweet. My question: Has anyone found a brand of sausage that is similar? I have failed a few times at the grocery store trying to find a replica. Next question: How do you think they prepare it? My first thought was grilled over the fire, but the outside is not charred, so I’m thinking maybe convection oven?

At the other buffets on property like Cape May, or in the food courts at resorts, I normally find regular link sausage, just like every other restaurant anywhere. So, thanks for your tips!
 
I would definitely think they bake it. They have to prepare them in mass quantities, so whichever cooking method is most conducive to that would be my best guess.

I've not looked for anything similar, but perhaps try an import or specialty food store? I wouldn't think a standard grocery store would carry something in the same vein as that.
 
On your next visit ask a server if they can find out what kind of sausage it is from one of the chefs. That might make it easier to track down.
