Very picky adult diner at rotational restaurants

My family and I are being joined by my mother in law on our 3 night Halloween On the High Seas cruise out of San Diego next month on the Wonder. While the three of us are rather adventurous eaters, she is not and while perusing some of the posted online menus for Triton's, Tiana's, and Animator's Palate, I am concerned that most if not all of the entree choices may be too much for her. Questions...how flexible are the restaurants to accommodate someone like this? For example, if there is a seasoned steak on the menu, could she order it prepared plain with no added rubs, spices, or marinades? Could she conceivably work with the wait staff to create a meal that is more amenable to her?

There there is a lighter fare menu with steak, chicken, and fish every night.
 
Also, the "kids" menu usually has a plain grilled chicken, fish or steak.
 

I am a very picky eater and I would either order the lighter fare menu or double portion of kids menu - mac n cheese was the best ever
 
Also outside of entrees there is always caesar salad available even when not listed on the menu and there's always chicken soup on the kid's menu (as long as you're OK with Mickey heads!). Sauces can always be requested on the side, or not at all. You can also ask for veggie substitution if they have it; we or our friends sometimes asked for steamed asparagus or mixed veggies instead.
 
I have ordered the salmon off the lighter fare menu several times, its very basic and plain, the baked potato is my favorite with all the fixings!
Chicken soup is pretty good too!

In addition to the Caesar salad is a large garden salad also not listed but available each night.
 
right now, because of items in my life, I'm a picky eater. I plan on talking to the waiter, will have salad, soup maybe a meat and dessert. There are plenty of places on deck 11 plus room service, I plan to eat different items at different times, pizza, ice cream, sandwiches, I will NOT starve. Remember. it is one kitchen for the 3 restaurants, therefore the waiter will allow you to order anything that the other restaurants have, just ask and you will receive:yay:
