I’m staying at DVC animal kingdom lodge but after we check out would like to visit VERO beach resort for awhile. Is this allowed?

You know that it is 2 hours away, correct?

Anyone can visit the beach, restaurants, and shop. You are not allowed to visit the other areas unless you are staying at VB.
 
We were at Vero January 2022. Very relaxing. Kids were bored, but the wife and I enjoyed it.
 
VB resort (the areas of the building you can access without staying there) is pretty small. My in-laws had a house in VB. We stayed there a few days and ate a breakfast at the Disney resort.

IMHO, VB is a pretty boring town (at least it used to be when we went about ten years ago). It's ok if you like to sit on the beach all day, but there's not much else to do. A weekend there would be enough for me.

If you are looking for a day trip from Disney, you might like it. It's about a two hour drive, so budget four hours for driving.
 

We love Disney Vero Beach and go there every summer. It was one of the factors that helped us buy into DVC. We stayed there on cash to see if we would like a non-parks/resort DVC property and we love DVB. So yes, you can stay there as a non-member and you can visit to walk around and get a feel for the place. Low-key beach vibe with a ton to do in the area (we know it quite well now after 10+ years of visiting every summer).
