I scanned the list and most of the activities below are always going on.... The only ones that are seasonal that I can see would be Dodgertown, the Turtle Walk, and the Manatee Watch..
I would call ahead to VB and have them fax you a sample itinery... That way you can an idea on how they offer the activities...

Miniature Golf
Challenge your friends and family to a round on our nine-hole miniature-golf course.
Watersports
Enjoy the thrills of Wave Ventures, kayaks, Hobie Cats, and other watersports.
Turtle Walk
Experience a guided turtle watch -- a three-hour program that includes an informative slide presentation about the sea turtles' annual migration to the shores of Florida's east coast, immediately followed by a guided walk along the Resort's beach to witness the miracle of these gentle creatures laboring to build their nests. Offered June through July; space is limited. To experience the Turtle Walk program as a child, you must be at least 7 years of age and accompanied by an adult.
Jungle Trail Bike Adventure
Cycle on a tropical 7-mile bike adventure along the Indian River Lagoon.
Tennis
Learn special techniques from the Resort tennis pro. Tennis activities include round-robins, private and family lessons, and an opportunity to challenge the pro. By appointment only.
Stargazing
Join our recreational astronomy guide for a telescopic tour of the stars. Offered seasonally.
Campfire
Four nights a week, Guests gather by our campfire to roast marshmallows, make s'mores, and join in sing-alongs.
Other Fun Activities
Two-on-two basketball, tug-of-war, volleyball, horseshoes, scavenger hunt, crafts, Blinker's Arcade, bingo, balloon toss, archery, The Very Merry Unbirthday Party, animation cel painting, SnorkelEars, and tot-time crafts.
Massage Therapy
After a day of activities, treat yourself to any one of a variety of massage treatments. Choose from relaxation, sports, or deep tissue massages, foot reflexology, or specialized treatments like infant, aroma therapy, and expectant mothers' massages. Whether you choose a 15-, 30-, or 60-minute treatment, our professional, licensed therapists will revitalize your body for another full day of fun!
Supervised Children's Activities
Aquaventures at the Harbor Branch Oceanographic Institution: Located on 500 acres along the Indian River Lagoon, this working laboratory offers unique insights into our oceans. Educational exhibits and aquariums provide visitors of all ages with an opportunity to learn more about today's marine technology.
Disney Discovery Club (2DC) consists of supervised "edutainment" programs that give kids an opportunity to discover, create, and explore.
Themed Evening Programs: Offered 5 p.m. to 8 p.m. for children ages 4 to 12. A variety of activities are played, including non-traditional volleyball, soccer, games, and races, with dinner included. To top the night off, we celebrate at an open campfire, singing songs, roasting marshmallows, and making s'mores.

Manatee Watch
See one of Florida's most-loved endangered species firsthand at the Manatee Observation Center. Offered seasonally.
Tink's Treasure Trove
Visit and tour Mel Fisher's Treasure Museum and experience the history of the "Treasure Coast" firsthand. Then come back and comb the beach with a metal detector in search of your own treasure!
Kayaking
Enjoy a peaceful four-hour cruise down the river, where you can see a variety of wildlife, including dolphins, manatees, and many types of birds.
Dodgertown
This is the spring-training home of the Los Angeles Dodgers. Watch the Dodgers in action, enjoy top-notch play from the Vero Beach Dodgers April through August, and visit with sports legends at this famous 450-acre complex. Dodgertown also includes two golf courses, a conference center, a country club, and a full range of recreational facilities.
Golf
There are many challenging courses for the avid golfer, including 6 public and 14 private courses in the area. Local golf courses with which the Resort has special arrangements and rates include the Sandridge Golf Course (public), The Links at Pointe West (semiprivate), Aquarina (semiprivate), and the Indian River Club (private).
Fishing
This area offers some of the best fishing around, whether it's offshore sportfishing for sailfish, king mackerel, or wahoo, or river fishing for tarpon, trout, snook, and redfish.
Shopping
There is no shortage of shopping areas in Indian River County. You'll find the Indian River Mall (featuring The
Disney Store and a 24-screen AMC® theater), beachside specialty boutiques, and Tanger Outlet Center at Vero Beach, which offers more than 75 designer-outlet stores.
River Cruises
Enjoy the scenic Indian River on one of several area cruise boats. See manatees, white pelicans, and dolphins in their natural habitat.
Treasure Museums
Mel Fisher and McLarty Treasure Museums offer Guests a view of the many splendors treasure hunters have retrieved from shipwrecks along the Florida coast.
Riverside Theater
Located at the Civic Arts Center in Riverside Park, this 633-seat theater hosts Broadway plays, musical groups, nationally known artists, and productions by The Acting Company of Riverside Theater, its own in-house theatrical group.
