I'm planning a visit on Saturday 1/18, and curious how available the vegetarian breakfast chimichangas tend to be? I'm dying to try one if I make it over to Frontierland by 9am or so. Do these go faster than the meat ones?

Are the veggie ones just egg and potatoes or do they have a fake meat? Even though I'm no longer a vegetarian, I still lean toward the veg friendly dishes...but I'm not a fan of the Impossible meats that seem to be in everything plant based!

No fake meat, which was a pleasant surprise. I tried the veggie version a few months ago and think it had eggs, cheese, potatoes and peppers. Maybe onions too.
If you eat egg and cheese, Tiendita in DTD has good breakfast burritos. Tiendita is the takeout affiliated with Paseo and Centrico. They don't list the breakfast items on their website. This is was the menu in September.
