Vegetarians I need your help

I'm making cauliflower grilled cheese for lunch today.
Rice the cauliflower in a food processor and bake 400 to soft. Squeeze out liquid. Mix with eggs, oregano, salt &pepper and grated parmesan.
Fry in patties (use pam spray) until golden brown. Top one piece with shredded cheddar then top with another patty.
 
I am not sure how strict you want to be with this, but if your are trying to cut out all meat products & bi-products, make sure you read the labels. Meat bi-products sneak up where you least expect them!
